Ingredients

  • 1/4 cup water
  • 1/4 cup sugar
  • About 10 leaves fresh mint coarsely chopped
  • 2 cups coconut water
  • 1/2 cup good quality gin
  • Ice cubes
  • Fresh coconut pulp sliced for garnish

To Prepare

  • To make the simple syrup, combine the water and sugar in a small saucepan over low heat. Bring to a simmer and cook, stirring a few times, until sugar has dissolved. Remove from the heat and let cool. 
  • In a couple of glasses, muddle mint with the simple syrup and gin. Add ice, pour coconut water on top, stir, and garnish with the fresh and tender coconut pulp.

    I love you & I love you show. I adore cooking and watch the cooking shows on pbs. You can always tell a good cook that loves cooking by the look in their eyes when they take a bite of the food they made and the way they converse about what they are preparing. I’m from New Mexico and we put a different spin on Mexican food, but it’s still hot and yummy. I’m not really into gin but my nickname is Coco and I was a bartender for years, so I am going to have my friend bring the gin and we’ll try these out with the tostada recipe that got me here.     I love your show Pati, especially enjoyed the one with Jose Andres. Gin & tonic is the national drink of Spain and the Coco Fish is basically a version of the gin & tonic and the entomology of the word ‘coco’ is Spanish/Portugese origin meaning grinning face from the dots on the coconut.

    What it syrup what you put first in the video with jose

      Hola Fabiola, It’s simple syrup. To make it use 1/4 cup sugar and a 1/4 cup water and heat over low heat. Bring it to a simmer and cook, stirring it a few times, until the sugar has dissolved.
