Ingredients

  • 4 1-inch thick bone-in pork chops
  • 1 tablespoon ancho chile powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher or sea salt or more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • Pickled Grape Salad to serve

To Prepare

  • Place pork chops on a baking sheet or cutting board. Stir ancho chile powder, oregano, salt and pepper in a small bowl. Rub the pork chops with the spice mixture. Set aside.
  • Preheat the grill to medium high, or heat a grill pan over medium-high heat.
  • Brush the grill or grill pan with 1 tablespoon of vegetable oil. Add pork chops, cook for 7 to 8 minutes, then flip and cook on the other side for another 6 to 7 minutes. The meat should be at 145°F to 150°F if checked with a meat thermometer.
  • Transfer the pork chops to a plate to rest for about 5 minutes. Slice and serve with the Pickled Grape Salad.

    I love to watch Pati’s show on PBS because I lean new recipes every time. Mexican cuisine is so vast and rich that it is never the same thing, there is always something new to learn. I am from Chihuahua and love to learn recipes from other parts of Mexico.
    Recently I made the Red Chile Rubbed Porks chops -oh my goodness- what an experience! It was an explosion of flavors. Sweet, sour, and spicy – just heaven in your mouth!

    Very nice, flavorful pork chops. I added a little Tajin to the spice mix. I did not do the grape salad, but rather served it with Southern style peas, fancy greens, and Mexican cornbread. Everyone went back for seconds. Another great recipe from Pati.

    Pati, I watch you religiously on our PBS channel, Saturday mornings! And I LOVE Juju! Tried the chile rubbed pork chops, and they were delicious! I ran out of ancho powder, so, I used regular chile powder, added some smoked paprika and black pepper to the blend and it came out great! Made the grape salad, only, I added cucumbers along with grapes. Turned into a great mid-week meal! Thanks for another great recipe!
