Ingredients

  • 3 pounds red potatoes
  • 4 tablespoons unsalted butter
  • 4 scallions
  • 1 chile from chipotles in adobo sauce chopped, or to taste
  • 1 to 2 tablespoons sauce from chipotles in adobo sauce optional
  • 1/2 cup milk
  • To taste kosher or coarse sea salt
  • To taste freshly ground black pepper

To Prepare

  • Rinse and quarter the potatoes. In a large pot, bring salted water to a boil. Add the potatoes and cook for about 15 minutes over medium- high heat, or until thoroughly cooked and soft. Drain.
  • In a large, heavy skillet set over medium heat, add the chunks of butter. Once it melts and begins to bubble, stir in the scallions and cook for a couple of minutes until they soften. Add the chopped chipotle chile and combine well. Add the cooked potatoes along with the milk.
  • Using a potato masher or a wooden spoon, mash the potatoes roughly as you mix them with the chipotle and scallion mixture. Sprinkle with salt and freshly ground pepper to taste. Serve hot.

    We are having guests for dinner this weekend, and once I started looking at your links, I couldn’t decide what to make!

    settled on the pork with sweet citrus sauce (not correct name…), and saw your links to the chipotle potatoes and a tomato and cotija salad, which I will also make. Everything sounds wonderful, and I can’t wait to try LOTS of your ideas! I am a fan of our pressure cooker, so will undoubtedly do my best to convert some of the recipes to that method; espcially as we are embarking on a several week road trip in our RV, and when we have power, we like to make meals for a few days in our pressure cooker.

    I just discovered you, but looking forward to getting to know you and your wonderful food better! Will try to post a follow-up after we feed our friends in a couple of days…! 🙂

    I made the Oaxacan Chicken with Oregano and Garlic with these Mashed Potatoes. They were a hit with my husband, who was surprised that these were Mexican recipes! (He’s still stuck in the American Mexican restaurant rut) I can’t wait to surprise him with more of your recipes! My grandmother was from San Antonio, TX, so we were raised with her yearly Tex-Mex dinner for the whole family. I sure miss those days. Thanks for sharing your love of Mexico!

    I love these! I also love these chipotles in adobo sauce. I’ve started adding them to my chili. It adds a Smokey depth. I love your show Pati, and I love your stories about the food you make. You can tell you have a passion about food, and you’ve passed that on to your boys! Beautiful family.

    Whenever I make a Mexican style meal, it always turns into a party atmosphere. So I am making Mexican style food more and more when guests come over. What I love about this dish is that it is easily made in the slow cooker/ crock pot. The WARM setting keeps the potatoes at perfect serving temperature up to 2 hours after they finish cooking, no babysitting required. Perfect for those hot days when we do our grilling (steaks, corn, tortillas, chicken) outside. Thank you for a lovely recipe.

    Just made these tonight and they turned out delicious! Added more butter and milk bc we like em creamey😊. The onions were delicious! Next time I’ll go ahead and add the sauce. Just the one Chipotle got lost in all those potatoes😉

    Pati you have changed the way I cook and eat. Since making these potatoes I am hooked on chipotles in adobe sauce. I want to put it in everything. I’ve also started toasting things in my cast iron skillet. Garlic, onions and even bay leaves. I’m always trying to add another layer of flavor, like you have taught me. Thank you for all your recipes and tips on cooking.
