Ingredients

  • 1 teaspoon dried oregano
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon ground cumin
  • 1 teaspoon kosher or coarse sea salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 2 7- to 8-ounce skirt steaks about 1/2-inch thick, at room temperature
  • 2 tablespoons unsalted butter

To Prepare

  • In a small bowl, mix all the spices with salt and pepper.
  • Pat the steaks dry and apply the spice rub on both sides. Let steaks sit for a few minutes or up to 2 hours (if more than a half an hour place in the refrigerator).
  • Heat a skillet over high heat. Add the butter and as soon as it melts, add the steaks. Sear for about 4 minutes on one side, and between 2 to 3 minutes on the second side (for medium). Adjust timing to your liking.
  • Let it rest for 3 to 4 minutes before serving.

    The dry rub works really well for taste. I substituted smoked paprika for the sweet paprika out of necessity. Be sure to peel as much of the film off of the steak as you can to allow the seasoning to penetrate the meat.

    What can use use in place of the cumin in the dry rub?

    On the ingredients, when you say oregano, you mean Mexican oregano, right? Or, is regular oregano alright to use? Also, can I use smoked paprika instead of sweet paprika? Love your show and recipes. Keep them coming. Thanks.

      You can use any oregano you have, Lazaro. You can use smoked paprika…it will have a different taste but also good!

      I cook it over high heat. I like mine medium, so I sear it for about 4 minutes on one side and 2-3 minutes on the other side. But if you like it more rare or more well-done you can cook for shorter or longer…

    Hi Patti, I loved this episode with your son Alan cooking with you. I could tell it was a bittersweet moment at the end thinking of how much you’ll miss him moving away for college.
