Ingredients

For the crust:

  • 1 1/2 cups finely ground Maria cookies vanilla wafers or graham crackers
  • 6 tablespoons unsalted butter melted, plus more for greasing the pan

For the cream cheese filling:

  • 1 pound cream cheese at room temperature
  • 1 14-ounce can sweetened condensed milk
  • 3 large eggs at room temperature

For the dulce de leche topping:

  • 1 1/2 cups sour cream
  • 1 14-ounce can dulce de leche or cajeta
  • 1 cup chopped pecans

To Prepare

  • Butter a 9- to 10-inch springform pan and set aside.

To make the crust:

  • In a large bowl combine the ground cookies and melted butter until thoroughly mixed. Turn the cookie mixture into the springform pan. With your fingers, pat it evenly around the bottom of the pan, gently pushing it up the sides to make a crust 1/2- to 1-inch tall. Refrigerate while you make the cream cheese filling and dulce de leche topping.

To make cream cheese filling:

  • Place the cream cheese in the bowl of an electric mixer and beat at medium speed until smooth and light, 3 to 4 minutes. Add the sweetened condensed milk and continue beating until well mixed, scraping down the bowl as needed. Add the eggs one at a time, again scraping down the bowl as needed, and continue beating until the mixture is well blended and smooth, set aside.

To make the dulce de leche topping:

  • In a medium bowl, mix the sour cream with the dulce de leche until combined.
  • Adjust the oven rack to the lower third of the oven and preheat to 350°F.
  • Remove the springform pan from the refrigerator. Gently spread the cream cheese filling evenly, trying not to distress the crust. Place the cheesecake in the oven and bake for 35 minutes, or until it is set and the top is lightly browned. Remove from the oven and let cool for at least 10 minutes before you add the dulce de leche topping.
  • Spoon the dulce de leche topping over the cream cheese filling, add the pecans all around the edge and place the pan back in the oven for 10 more minutes. Remove from the oven and let the cheesecake cool to room temperature. Cover and refrigerate for at least 4 hours before serving. It tastes even better if it chills overnight.
  • Before serving, run the tip of a wet knife around the edge of the pan to release the cheesecake. Remove the ring, then slice and serve the cake.

    I LOVE the Dulce de leche topping for this! I did have one question.

    I tend to bake my cheesecakes in a water bath, because I love a lighter, fluffier cheesecake texture. Would that technique work well in this one, too? But then just bake the cheesecake dry in the last few minutes before adding the topping?

    This was my first Cheescake. So delicious. Bought a spring form pan just for this recipe. Today I’m trying it I’m Reynolds aluminum cake pans. My experiment is to see if I can make two small cheesecakes with the ingredients listed so I can gift for the holidays. Any temp suggestions? I’m going to try 350 for less time.         Success!! Made two cheesecakes out of one in the Reynolds pans. They already come with parchment and a lid. Perfect for gifting. We ate one and gifted the other. Now to the other ten. Yikes. I’ll spread them out this month. The temp and cooking times stayed the same and it was perfect. I added som festive sprinkles at the edge of the pecans. Thanks for such an easy and beautiful recipe.

      I’ve used this recipe to make 2 – 6″ cheesecakes using springform pans but I’m intrigued with your use of disposable pans. Do you mind sharing which kind you used? Was it the 8″ round cake pans with lids that come in a 3 pack? Did you then slice and serve them like you would a pie? Thanks for this great idea!

    Wow! what a delicious recipe! My husband loves anything with pecans. (he is from Torreón) Have you ever been to Parras de la Fuente? We went there two years ago and I was amazed at the number of pecan trees! Also, it’s such an oasis right there in the desert of Coahuila. It’s one of the “magic towns.” Oldest winery in the Americas is there also. Anyway, this cheesecake is yum!

    This was a hit at my dinner event with friends tonight. It was very simple to put together and I used vanilla wafers for the crust. I made it 24 hours ahead so it had plenty of time to chill (I’ve learned my lesson in the past that you can’t rush a cheesecake to cool down). The only issue I had was how long it took to cook in the oven. I live near Oklahoma City (1,200 ft elevation). It took just over an hour to set in a gas oven. I will definitely add to my dessert list. Thanks Pati!!!

        A mí me pasó también, aun después de dejarlo en el horno unos minutitos más. Nunca se puso firme, pero creo que descubrí mi error. Las latas (en EEUU) se miden en peso neto. Yo tenía un frasco grande de cajeta y medí 14 onzas líquidas. Una lata de 14 onzas en realidad contiene como una taza líquida. ¡Creo que le puse demasiada cajeta! De cualquier manera quedó exquisito. 🥰

    Oh My Goodness!!! Best birthday cake ever!!! The original recpe was great but the tweaked recipe was even better. Pati, if you like cinnamon and caramel together you have to try adding 1 teaspoonful of cinnamon to the cheesecake batter. Using the chocolate marias didn’t make a big difference to me, but then I’m into caramel not chocolate, lol. Thank you for this recipe!

    I have this in the oven right now! Can’t wait to see how it turns out. I did take a few liberties with the recipe though.When I went to buy the Marias, they were out of the regular ones but they had chocolate ones. It seemed like a natural so I got them. Also, I love love love cinnamon with any kind of caramel, dulce de leche, or cajeta. So I added a teaspoonful to the cheesecake batter. I tasted the batter before I poured it into the crust and it was awesome! I’ll let you know how it comes out with thdulce de leche topping.

    I have made this recipe three times. The first time I only used condensed milk instead of dulce de leche. I got confused for some reason I thought they were the same.     Okay, I’m confused. If I follow the recipe as written, I will have 3 layers. From bottom to top: Crust, cheesecake, dulce.

    However, the photo on this post shows it from bottom to top: crust, dulce, cheesecake.

    Is it possible to make it as shown on the photo? Won’t the dulce layer break down in the oven while the cheesecake layer bakes?

    saw your show & i’m a bit confused. the picture shows 3 layers (from bottom: crust, cheesecake, dulce de leche topping – correct?)in yesterday’s episode, you poured the dulce de leche mixture on TOP of the cooled & set cheesecake batter. you did NOT blend it in with the cheesecake batter. so why does the 2nd layer (presumably cheesecake) on this site look more like chocolate? & why is it so much thinner than the dulce de leche topping? i’d love to make this soon. please advise. thank you!! 🙂

      Hola Billie, You are correct! The dulce de leche mixture is not mixed with the cheesecake batter. Follow the recipe as written & you will have 3 layers. I’m so happy you are making my recipe – hope you enjoy!!

    I saw your show for the first time yesterday by chance, and I have to say I have been missing out!!
    I have checked, and I am not able to catch your shows regularly, (due to cable provider) but I am grateful I can visit your site as often as I can.
    24 hrs later and I have already made Nana Jose’s flourless recipe, my son tried it and immediately went back for seconds. I am thrilled. I am now at the cooling stages of this Deulce de leche recipe, and I can’t wait to try it tomorrow ( going to let it cool overnight as you suggested)!! I was unable to find La Lechera so I had to use what my nearest grocery store provided..(perhaps that’s why my recipe is not as “browned” as the pic? Next time I will definitely hunt down La Lechera dulce de leche.
    I am already a huge fan, and can’t wait to try out more recipes!

    After seeing this episode many times, I decided to finally make the cheesecake this weekend. It was fabulous!! And so easy….I think I put it in the fridge too soon because there were little pale spots on the top from condensation dripping. Other than that, it was not hard at all. I did have to cook mine longer to get it to set, but that’s probably just my oven.

    We love your show in our house! I have been baking cheesecakes, recently, and am drooling over this one!! I have one question (a general baking question, which specifically relates to this recipe) before I bake this cheesecake.

    If I use a 10 inch springform pan when baking a cheesecake, is there a difference in baking time?? Say, if I have a 9 inch pan recipe and want to use a 10 inch pan- would I cook it for less time? This recipe seems to have 9 or 10 inch pans as interchangeable, and I remember you using a 10-inch in the episode, but is there a difference in the cooking time that could possibly be noted on the recipe, for nervous bakers?

      Hola Tamara, Thank you for watching & for your message! I hope you do try the dulce de leche cheesecake. Bake it for the 35 minutes as written in the recipe, making sure it is set and lightly browned on top before removing from the oven. For a nine-inch pan, it might take a couple minutes longer in the oven, but I would still check it at 35 minutes.

      Yes, of course. Dulce de Leche tends to be lighter, cajeta a bit more intricate. Both will work phenomenally well.
