Episode 101: Quesadillas

Quesadillas–the perfect marriage of heaven and earth, where the basic, simple tortilla meets the ecstasy of cheese. If you can find the right cheese, that is… So, where do you find great Mexican cheeses in the US? If you can’t find Oaxaca Cheese or Manchego, what can you use instead? What about Monterey Jack or Cheddar as a substitute?

In this episode I interview the fabulous Joe Yonan (who just came out with an equally fabulous cookbook!), who gives us a lot of cheesy advise.

Would it shock you to know that you don’t technically need to stuff cheese inside for it to qualify as an authentic Mexican quesadilla?

    Hi Pati!
    I was wondering if you have a recipe for quesadillas? I’ve always kind of known that the ones here in the U.S. aren’t really what a quesadilla would be traditionally. I like learning how to make food the way it would be traditionally made. Thank you!

    I love watching your show about everyday. Find it to great way to learn new recipes and cooking techniques, but I was wondering are all your recipes in your cookbooks and did you ever get to making DVD series?

      Thank you, Kimberley! No DVD’s yet… all of the show’s recipes are here, on this site. And my cookbooks have a mix of recipes from the show and others not included in the series.

    I first saw Pati on Create TV. I Love Mexican food and was excited to learn some new dishes. But most of all I like her style of communicating her recipes. I now have her on my frequent tab menu on my computer so I can browse for new recipes. Thank You Pati

    I LOVE your show. Just saw it for the first time this weekend, and am now a devotee! I absolutely loved the Plantain tortilla segment,and really wanted to be able to show it to my neighbor, who is a chef. However, I can’t find a video of the entire episode, only the 15 second intro clip. Are you going to be posting the full video? (I hope, I hope.) Also, I missed the name of the cheese recommendation from Joe Yonan. It was the last one the two of you were talking about, and you picked up a large brick of it out of the cheese case. Can you please post the name.

    on yesterdays show you made a salsa with onion, garlic, cilantro, oil, vinegar salt, said you used it on everything stored in the refrigerator, i think you made it on the show to serve with plaintain quesadillas but i don’t see it on the web.

    I was happy to see the first show, which I had tread aobut in the Post. the recipes were clear to follow and looked delicious. I was fascinated to learn aobut making dough from yellow plantains. It was also fun to see Joe Yonan, whose columns I have read for ages. Congratulations on the show. I’m looking forward to seeing all the episodes, and expanding my notion of what constitutes Mexican cuisine.

    This was a really good show. It highlighted recipes I hadn’t heard of. However, the site is not working. The only recipe available is the first one.

    WOW – I had just noticed (at the PBS site) that you’re a TV star now and a new header on the site?! And soon the book too?
