C\u00fabrelos con agua y deja que hiervan a fuego medio-alto. Reduce el fuego un poco y hierve de 10 a 12 minutos, hasta que los chiles se rehidraten y los jitomates est\u00e9n cocidos y aguados. Pasa los chiles, los jitomates, el ajo y 1\/2 taza del agua de cocci\u00f3n a una licuadora. Agrega la cebolla picada, los chiles chiltep\u00edn, los chiles de \u00e1rbol, el or\u00e9gano y la sal. Licua todo hasta tener un pur\u00e9 suave.<\/span><\/div><\/li><li id=\"wprm-recipe-12014-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Calienta la manteca o aceite en una olla grande y con fondo grueso y calienta a fuego medio-alto. Agrega la harina y revuelve bien para hacer un roux. Cocina, revolviendo, durante un minuto o dos hasta que burbujee y est\u00e9 ligeramente tostado. A\u00f1ade el pur\u00e9 de chile colorado. Cocina de 5 a 6 minutos, revolviendo frecuentemente, y aseg\u00farate de la que mezcla no se pegue y queme en el fondo de la olla, hasta que se haya espesado y oscurecido ligeramente. Agrega el caldo de res y la carne cocida y revuelve. Deja que suelte el hervor. Reduce el fuego a medio, tapa parcialmente la olla, y sigue cocinando por unos 30 minutos, revolviendo seguido y raspando el fondo de la olla hasta que la salsa se haya espesado y la carne est\u00e9 bien sazonada y cubierta con la salsa de chile y est\u00e9 tan suave, que se deshaga.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para hacer los burritos:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-12014-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Calienta las tortillas en un comal o sart\u00e9n precalentado.
