class=\"wprm-recipe-instruction-text\">En un recipiente lo suficientemente grande para la tripa y las patas, mezcla el vinagre, 4 tazas de agua y 1 cucharada de sal, revuelve para disolver la sal. Agrega la tripa, las patas y suficiente agua adicional para cubrir la carne y remoja durante 30 minutos. Escurre la carne en un colador y enju\u00e1gala bien.<\/div><\/li><li id=\"wprm-recipe-13694-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Corta la tripa en pedazos peque\u00f1os, de 2 a 3 cm.<\/div><\/li><li id=\"wprm-recipe-13694-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En una olla muy grande, agrega 5 litros de agua y la cebolla y ajo. Si vas a usar pata de res, ponla en la olla y deja que el agua hierva a fuego alto. Reduce el fuego a medio y hierve, con la olla parcialmente tapada, durante 20 minutos. Retira la espuma que se forme en la superficie.<\/div><\/li><li id=\"wprm-recipe-13694-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Agrega la tripa a la olla junto con la cucharadita de sal restante, el or\u00e9gano y el ramo de menta y deja que hierva. Reduce el fuego a bajo y hierve, con la olla parcialmente tapada, durante 4 horas, o hasta que la tripa est\u00e9 suave y tierna pero todav\u00eda tenga textura. Retira el ajo y la cebolla.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Mientras, prepara el pur\u00e9 de chile:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-13694-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon los chiles secos y el ajo en una olla peque\u00f1a, c\u00fabrelos con agua y calienta hasta que suelte el hervor. Reduce el fuego a medio-bajo y hierve de 10 a 15 minutos, hasta que los chiles se suavicen. Ret\u00edralos del fuego y p\u00e1salos a la licuadora junto con el ajo y 1\/2 taza del agua de cocci\u00f3n. Agrega las semillas de comino y cilantro y licua hasta tener un pur\u00e9 suave; aparta.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para terminar el menudo:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-13694-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Si las usaste, saca las patas de res de la olla con una cuchara con ranuras y deja que se enfr\u00eden hasta que las puedas manejar. Entonces, corta toda la carne y pedazos gelatinosos y tira los huesos.
