A\u00f1ade agua para cubrirlo 8 cm al menos. Agrega la cabeza de ajo. No a\u00f1adas sal en este momento o el ma\u00edz se pondr\u00e1 duro. Hierve a fuego medio-bajo, con la olla parcialmente tapada, de 4 a 5 horas, hasta que el ma\u00edz se abra como flor. Retira ocasionalmente la espuma que se acumula en la superficie y no dejes que se seque; agrega m\u00e1s agua si es necesario. Si usas ma\u00edz de lata o precocido, comienza a preparar el pozole con el paso de abajo. <\/span><\/div><\/li><li id=\"wprm-recipe-9049-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Mientras, pon el pollo, y la carne puerco si la vas a usar, en una olla grande. A\u00f1ade agua para cubrir toda la carne 5 cm al menos. A\u00f1ade la cebolla, e cilantro y la cucharada de sal y pon a hervir la carne. Hierve con la olla parcialmente tapada durante unos 35 minutos, hasta que el pollo est\u00e9 cocido y suave. Escurre la carne, reservando el caldo. Cuando el pollo se haya enfriado, retira la piel y los huesos y desmen\u00fazalo. <\/span><\/div><\/li><li id=\"wprm-recipe-9049-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En la olla, agrega el ma\u00edz y su caldo, retirando la cabeza de ajo, o el ma\u00edz enlatado y 2 tazas de agua con el pollo y su caldo. Rectifica la saz\u00f3n y hierve todo junto unos 10 minutos m\u00e1s.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para preparar el pur\u00e9 de chile:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-9049-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Pon los chiles en una olla de 3 litros y c\u00fabrelos con agua. Hierve los chiles a fuego medio-alto durante unos 10 minutos, o hasta que se suavicen y est\u00e9n rehidratados. Lic\u00faa los chiles con 1\/2 taza del agua de cocci\u00f3n, la cebolla, el ajo, el comino, los clavos y la sal en una licuadora hasta obtener un pur\u00e9 terso. Cuela el pur\u00e9, presionando con la parte de atr\u00e1s de una cuchara de madera para extraer todo el l\u00edquido posible. <\/span><\/div><\/li><li id=\"wprm-recipe-9049-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Calienta 3 cucharadas de aceite en la misma olla a fuego medio, sin dejar que llegue a humear. A\u00f1ade el pur\u00e9 de chile y d\u00e9jalo hervir de 6 a 8 minutos, revolviendo ocasionalmente y dejando que se espese.<\/div><\/li><li id=\"wprm-recipe-9049-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">A\u00f1ade el pur\u00e9 de chile al pozole que sigue hirviendo y deja cocinar todo por 25 a 30 minutos m\u00e1s, rectifica la saz\u00f3n y sirve en platos para sopa. Acomoda los ingredientes para acompa\u00f1ar en recipientes peque\u00f1os en la mesa para que todos se preparen el pozole a su gusto. Si vas a hacer el pozole con anticipaci\u00f3n, deja que se enfr\u00ede, t\u00e1palo y refrig\u00e9ralo.
