class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Pon la carne en una olla grande y gruesa. Con un pedazo de manta de cielo, envuelve las hojas de laurel, 2 ajos pelados y las pimientas gordas enteras. Amarra todo con un pedazo de hilo para cocina y ponlo encima de la carne. Cubre la carne de puerco con agua y agrega 1 cucharadita de sal. Revuelve. Calienta a fuego alto y deja que suelte el hervor. Retira la espuma que se acumule en la superficie. Reduce el fuego a medio-alto y deja que se cocine durante unos 45 minutos, hasta que se evapore toda el agua<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para hacer la salsa de chile:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-14879-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Mientras tanto, prepara la salsa. En un comal o sart\u00e9n mediano precalentado a fuego medio, tuesta los chiles anchos y guajillos durante un minuto por lado, hasta que se tuesten, cambien de color y empiecen a humear, pero sin dejar que se quemen. P\u00e1salos a una olla peque\u00f1a y c\u00fabrelos generosamente con agua. Ponlos a cocinar a fuego medio-alto durante unos 10 minutos, hasta que se hidraten.<\/span><\/div><\/li><li id=\"wprm-recipe-14879-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">En el mismo comal, pon los tomates, 2 dientes de ajo sin pelar, la cebolla y el jalape\u00f1o. Coc\u00ednalos de 8 a 10 minutos, y voltea cada 2 o 3 minutos mientras se tateman (tambi\u00e9n puedes rostizar o tatemarlos en el horno o el asador durante el mismo tiempo). Cuando la piel est\u00e9 completamente tatemada y los tomates est\u00e9n muy aguados y la cebolla y el jalape\u00f1o muy suaves, pasa todo a la jarra de la licuadora, sin olvidarte de quitarle la piel quemada a los ajos. Agrega los chile rehidratados junto con 1 taza del agua de cocci\u00f3n, otra taza de agua, el or\u00e9gano, las semillas de comino y 1 cucharadita de sal. Licua todo hasta obtener un pur\u00e9 suave.<\/span><\/div><\/li><li id=\"wprm-recipe-14879-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Cuando toda el agua se haya evaporado en la olla con la carne, quita el paquete de tela y deja que la carne se cocine en su grasa de 3 a 4 minutos, hasta que se dore por todos lados. Puedes agregar un poco m\u00e1s de manteca o aceite si de entrada la carne no ten\u00eda mucha grasa.<\/span><\/div><\/li><li id=\"wprm-recipe-14879-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Reduce el fuego a medio-bajo y agrega la salsa de chile. Revuelve bien y a\u00f1ade la cascara de naranja. Cocina de 15 a 20 minutos, hasta que la salsa se haya espesado y sazonado y la carne est\u00e9 muy suave. El asado debe quedar muy caldoso.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para hacer los empalmes:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-14879-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para empalmes crujientes- En un sart\u00e9n o comal precalentado a fuego medio, pon un par de tortillas de ma\u00edz y unta una cucharada de frijoles con veneno en cada tortilla. Pon encima una porci\u00f3n generosa de asado de puerco y cubre con otra tortilla. Deja que las tortillas se doren de la parte de abajo durante uno o dos minutos. Volt\u00e9alas con cuidado para que se doren del otro lado uno o dos minutos m\u00e1s. As\u00ed tienes un empalme sencillo. Si quieres un empalme doble, agrega una tortilla, frijoles, asado, otra tortilla, frijoles, asado y otra tortilla encima.<\/div><\/li><li id=\"wprm-recipe-14879-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Para un empalme suave \u2013 Sirve una tortilla de ma\u00edz caliente en un plato, \u00fantale frijoles con veneno y pon encima una porci\u00f3n generosa de asado de puerco.
