Calienta a fuego bajo, tapa y deja hervir de 6 a 8 minutos hasta que el piloncillo se disuelva por completo en el agua y quede con consistencia de jarabe. Aparta.<\/div><\/li><li id=\"wprm-recipe-14916-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En la jarra de la licuadora, pon los chiles junto con 2 tazas del agua de cocci\u00f3n, el jugo de naranja, el jarabe de piloncillo, la cebolla, los clavos sin tallo, el or\u00e9gano, las semillas de comino y de cilantro, la pimienta gorda, la pimienta negra y la sal. Licua todo completamente.<\/div><\/li><li id=\"wprm-recipe-14916-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Precalienta el horno a 230 C y pon la rejilla en la parte m\u00e1s baja del horno.<\/div><\/li><li id=\"wprm-recipe-14916-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Con un cuchillo muy filoso, haz cortes en la piel y grasa de la pierna de puerco sin llegar hasta la carne, para que quede un patr\u00f3n de rombos. Pon la pierna en una olla muy grande y gruesa con el lado de la piel hacia arriba. Cubre la carne con la salsa de adobo, asegur\u00e1ndote que tambi\u00e9n haya salsa abajo de la misma. Agrega las hojas de laurel.<\/span><\/div><\/li><li id=\"wprm-recipe-14916-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Rostiza la carne en el horno sin tapar durante 1 hora. Luego s\u00e1cala, volt\u00e9ala de lado y tapa la olla. Reduce la temperatura a 177C, regresa la carne al horno y cocina durante 2 horas m\u00e1s. Saca la olla del horno, vuelve a voltear la carne para que el lado de la piel est\u00e9 arriba. Tapa nuevamente la olla, regr\u00e9sala al horno y cocina durante 2 horas m\u00e1s.<\/div><\/li><li id=\"wprm-recipe-14916-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para este momento, la carne debe estar muy suave y cay\u00e9ndose del hueso si insertas un tenedor o la agarras con unas pinzas. Si no est\u00e1 as\u00ed, horn\u00e9ala durante media hora m\u00e1s. Saca la carne del horno, destapa y deja que se enfr\u00ede un poco. Saca 4 cucharadas de grasa de la superficie y aparta para hacer la Salsa para pizza con adobo de naranja.<\/div><\/li><li id=\"wprm-recipe-14916-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cuando se haya enfriado, saca la carne de la olla y ponla en una tabla para cortar grande. Deja la salsa de adobo en la olla y reserva 1 taza para hacer la Salsa para pizza con adobo de naranja. Saca y tira las hojas de laurel.<\/div><\/li><li id=\"wprm-recipe-14916-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Con un tenedor para carne y un cuchillo filoso, corta la carne en rebanadas delgadas. La carne debe estar muy suave. Tira el hueso.
