Agrega 1 cucharadita de sal, el piloncillo y el vinagre y revuelve. Reduce el fuego a medio. Agrega los chiles anchos, presionando con cuidado con una cuchara de madera para que absorban el agua y hierve durante unos 5 minutos. Apaga el fuego. Saca los chiles con un cuchar\u00f3n con ranuras y ponlos en un colador para que se escurran.<\/div><\/li><li id=\"wprm-recipe-17030-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cuando se hayan enfriado, haz un corte en el lado de cada chile, saca las semillas y retira el tallo. Seca los chiles con servilletas de papel.<\/div><\/li><li id=\"wprm-recipe-17030-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Rellena cada chile con una rebanada de queso panela &#8211; tal vez tengas que agregar m\u00e1s queso para que queden bien rellenos pero que todav\u00eda se puedan cerrar. Usa palillos de madera para que queden bien cerrados y no se abran.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Prepara la harina y la mezcla para capear:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-17030-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En un plato grande, mezcla la harina con la \u00bd cucharadita de sal restante, el or\u00e9gano y la pimienta negra. Pasa los chiles por la mezcla de harina para cubrirlos bien con ella.<\/div><\/li><li id=\"wprm-recipe-17030-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En una batidora, bate las claras de huevo hasta que se formen ondas firmes. Con cuidado, a velocidad baja, agrega las yemas y bate solo unos segundos, hasta que se incorporen con las claras.<\/div><\/li><li id=\"wprm-recipe-17030-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En una olla grande, agrega aceite para tener como 1 cm y calienta a fuego medio-alto. Cuando est\u00e9 caliente, mete un pedazo de pan o tortilla y si el aceite burbujea alrededor, ya est\u00e1 listo. En ese momento, mete cada chile en la mezcla de huevo, asegur\u00e1ndote de que quede completamente cubierto. Ponlos con cuidado en el aceite caliente, tratando de que la parte que cerraste con el palillo quede arriba. Echa un poco del aceite caliente encima del chile con una cuchara. Pon los chiles que quepan en la olla sin encimarlos y d\u00f3ralos unos 2 minutos por lado, volte\u00e1ndolos con cuidado con una cuchara con ranuras. Cuando est\u00e9n listos, ponlos en una rejilla o plato cubierto con servilletas de papel.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para hacer los tacos:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-17030-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Calienta las tortillas en un comal o sart\u00e9n precalentado a fuego medio durante un minuto por lado, hasta que est\u00e9n ligeramente tostadas por ambos lados.
