tazas de agua y 1\/2 cucharadita de sal en una olla grande y calienta a fuego medio. Cuando suelte el hervor, reduce el fuego a bajo y a\u00f1ade la masa en partes, mezclando al mismo tiempo con el agua usado una esp\u00e1tula hasta incorporar bien los ingredientes. A\u00f1ade la manteca y sigue mezclando con la esp\u00e1tula de 3 a 4 minutos hasta que la masa se vea \u201ccocida\u201d: la masa debe oler a tortillas de ma\u00edz cocidas, estar muy espesa y parecer\u00e1 que comienza a dorarse. Retira del fuego.<\/span><\/div><\/li><li id=\"wprm-recipe-8842-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Para preparar el relleno: Pon en la licuadora la 1\/2 taza de caldo de pollo restante, la pasta de achiote, los jitomates, los dientes de ajo, la cebolla blanca, el or\u00e9gano, la pimienta gorda, la cucharadita de sal restante y la pimienta negra. Lic\u00faa hasta obtener un pur\u00e9 suave.<\/span><\/div><\/li><li id=\"wprm-recipe-8842-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">En una olla, calienta el aceite a fuego medio. Ya que est\u00e9 caliente a\u00f1ade el pur\u00e9 de tomate y tapa la olla parcialmente porque puede salpicar. Cocina durante unos 10 minutos, revolviendo frecuentemente, hasta que se espese y oscurezca. A\u00f1ade el pollo deshebrado, revuelve y cocina de 8 a 10 minutos m\u00e1s revolviendo de vez en cuando, hasta que la mezcla est\u00e9 h\u00fameda, no caldosa y el l\u00edquido se haya absorbido casi por completo. Aparta.<\/span><\/div><\/li><li id=\"wprm-recipe-8842-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Para hacer los tamales: Prende una hornilla de la estufa a fuego medio. Con unas pinzas, pasa lentamente cada hoja de pl\u00e1tano encima de la flama por ambos lados y aparta, para que las hojas se vuelvan maleables y no se rompan.<\/span><\/div><\/li><li id=\"wprm-recipe-8842-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Ve poniendo cada hoja en la superficie donde vayas a trabajar, con el lado externo y brilloso hacia abajo. Agrega 1\/4 de taza de masa en el centro y extiende hasta formar un rect\u00e1ngulo de 8x10cm aprox. Con una cuchara, has una ranura superficial en el centro para formar una raya en la masa y agrega un par de cucharadas del relleno de pollo. Cierra con cuidado cada tamal, doblando los lados largos primero y luego los cortos para hacer un \u201cpaquete\u201d plano y apretado, aunque sin apretarlo demasiado.<\/span><\/div><\/li><li id=\"wprm-recipe-8842-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Prepara la vaporera o tamalera: pon una moneda en el fondo de la canasta de vapor y a\u00f1ade agua solo hasta cubrirlo (la moneda brincar\u00e1 y har\u00e1 ruido para avisarte si se evapora toda el agua). Forra la tamalera con algunas hojas de pl\u00e1tano para cubrir la base. A\u00f1ade los tamales uno por uno, apil\u00e1ndolos lo m\u00e1s uniformemente que puedas, y recu\u00e9stalos con la apertura hacia arriba. Cuando acabes de acomodar todos los tamales, tapa con hojas de pl\u00e1tano.<\/div><\/li><li id=\"wprm-recipe-8842-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Calienta la vaporera a fuego alto. Una vez que empiece a salir vapor y el agua comience a hervir unos minutos despu\u00e9s, pon la tapa, reduce el fuego a medio y cocina de 50 minutos a 1 hora. Las hojas de pl\u00e1tano tendr\u00e1n un color mucho m\u00e1s oscuro y se habr\u00e1n amoldado para cubrir los tamales, los cuales deben sentirse firmes al tacto. Apaga el fuego.<\/div><\/li><li id=\"wprm-recipe-8842-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Deja reposar los tamales en la vaporera de 10 a 15 minutos para que se pongan m\u00e1s firmes o hasta que vayas a servirlos. Puedes hacer los tamales con anticipaci\u00f3n y recalentarlos en la vaporera. Se pueden refrigerar hasta por 5 d\u00edas, o congelar en bolsas de pl\u00e1stico selladas hasta por 6 meses.
