{"id":2917,"date":"2013-11-15T05:11:16","date_gmt":"2013-11-15T05:11:16","guid":{"rendered":"https:\/\/patijinich.com\/es\/?post_type=recipe&#038;p=2917"},"modified":"2021-05-03T18:10:26","modified_gmt":"2021-05-03T18:10:26","slug":"salsa-macha","status":"publish","type":"post","link":"https:\/\/patijinich.com\/es\/salsa-macha\/","title":{"rendered":"Salsa macha"},"content":{"rendered":"<p>La salsa macha es una salsa inusual y especiada que viene del Estado de Veracruz, localizado a lo largo de la costa del Golfo de M\u00e9xico y que ha sido la puerta de entrada durante siglos a migrantes de todo el mundo (como mis abuelos paternos).<\/p>\n<p>Siempre ha sido un canal de intercambio muy importante, por lo que ha sido testigo de algunas de las combinaciones m\u00e1s interesantes de ingredientes, t\u00e9cnicas culinarias y tradiciones. La Salsa Macha es un ejemplo de esto.<\/p>\n<p>La salsa se prepara al fre\u00edr chiles chipotle secos (especialmente chiles morita), en una cantidad generosa de aceite de oliva con ajos. Estos dos \u00faltimos ingredientes son cortes\u00eda de la Conquista Espa\u00f1ola. Luego se sazona con sal. En algunas versiones se le agregan serranos o jalape\u00f1os frescos. Tambi\u00e9n se le agregan cacahuates o semillas de ajonjol\u00ed.<\/p>\n<p>La salsa que aqu\u00ed les comparto es mi versi\u00f3n favorita, y me tom\u00e9 la libertad de agregarle una buena cantidad de vinagre y algo de az\u00facar morena o mascabado, o piloncillo para balancearla. Esta combinaci\u00f3n me gusta tanto, que me encanta untarla en rebanadas de pan crujiente y com\u00e9rmela as\u00ed.<\/p>\n<p>Ya que se usa bastante aceite de oliva, la pasta de chile se asienta en el fondo del frasco despu\u00e9s de algunos minutos. Se puede traducir como una salsa femenina y masculina a la vez. Macha tambi\u00e9n se puede traducir como valiente, as\u00ed que tambi\u00e9n puede ser una salsa muy entrona.
