Una vez que empiece a burbujear, a\u00f1ade la harina para preparar el roux: revuelve continuamente durante 2 \u00f3 3 minutos, hasta que la pasta huela a tostado, tenga un color dorado p\u00e1lido y parezca un poco espumosa.<\/div><\/li><li id=\"wprm-recipe-9433-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Vierte el pur\u00e9 de chile encima del roux, reduce el fuego a medio-bajo y revuelve, para que se mezcle bien y no tenga grumos. Agrega la crema, 1\/2 cucharadita de sal y la nuez moscada. Sigue cocinando a fuego medio-bajo de 8 a 10 minutos, revolviendo de vez en cuando, para que no se pegue al fondo de la olla, hasta que se espese.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para preparar el relleno:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-9433-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Calienta un sart\u00e9n grande a fuego medio. A\u00f1ade el resto de la mantequilla junto con el aceite. Una vez que se derrita y burbujee, a\u00f1ade la cebolla. Cocina de 8 a 10 minutos, hasta acitronarla y las orillas se empiecen a dorar. Agrega el ajo, revuelve y cocina durante 1 minuto m\u00e1s. Agrega el huitlacoche, la flor de calabaza y el elote y espolvorea el 1\/4 de cucharadita restante. Cocina, revolviendo frecuentemente, durante unos 3 minutos, hasta que todo est\u00e9 caliente y la flor de calabaza se haya marchitado.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para armar las crepas:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-9433-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Calienta las crepas una por una en un sart\u00e9n antiadherente calentado a fuego medio-bajo, unos 10 segundos por lado. Ponlas en un plato y a\u00f1ade 3 cucharadas del relleno. Enrolla las crepas como si fueran tacos gordos. Ponlas con la parte de la uni\u00f3n hac\u00eda abajo en un plat\u00f3n. Arma todas las crepas. Vierte la salsa de poblano caliente encima y espolvorea con queso fresco. S\u00edrvelas calientes.<\/span><\/div><\/li><li id=\"wprm-recipe-9433-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">NOTA: Tambi\u00e9n puedes poner las crepas ya armadas en un refractario para hornear engrasado, c\u00fabrelas con la salsa y en vez de queso fresco, espolvorea un queso que se derrita encima.
