Nada de tacos ni de comida mexicana, \u00bfok?&#8221; me dijo mi pap\u00e1 despu\u00e9s de devorarse la comida de bienvenida que le prepar\u00e9, que fueron tacos de guisado.<\/p>\n<p>Los guisados funcionan muy bien para hacer tacos. En M\u00e9xico, existen muchos restaurantes peque\u00f1os, llamados fondas, que se especializan en guisados. Dado que le encantan a mi pap\u00e1, lo recib\u00ed con tres de sus favoritos: tinga de pollo con bastante chipotle, res en salsa verde con papas y nopalitos con cebolla, guajillo y elote. Para acompa\u00f1ar los tacos hab\u00eda frijoles refritos y arroz.<\/p>\n<p>Despu\u00e9s de que dijo que no quer\u00eda nada mexicano durante los siguientes tres d\u00edas, lo que me dio mucha risa, comenzamos a satisfacer sus antojos.<\/p>\n<p>La ma\u00f1ana siguiente est\u00e1bamos ya desayunando una doble porci\u00f3n de hot cakes de buttermilk con mantequilla, miel de maple extra, tocino y <em>grits<\/em> (s\u00e9mola de ma\u00edz.) Me cost\u00f3 trabajo hacerlo esperar hasta el lunch para seguir comiendo. Cuando se le acab\u00f3 la paciencia, me llev\u00f3 hasta las pizzas y luego a comer un <em>sundae<\/em> de chocolate enfrente. La cena consisti\u00f3 en filetes, papas horneadas y una ensalada de chayote estilo mexicano.<\/p>\n<p>La siguiente ma\u00f1ana, despu\u00e9s de desayunar bagels y lox en casa, fuimos a comer BBQ estilo Texas. As\u00ed que picamos suficiente cebolla, jitomates (menos de los que me hubiera gustado) y muchos jalape\u00f1os. Mientras cocinaba, us\u00f3 palabras extra\u00f1as (y probablemente inexistentes) para explicar por qu\u00e9 sus huevos a la mexicana son tan ricos, \u00bfven c\u00f3mo acitron\u00f3 la cebolla y suaviz\u00f3 los jitomates?<\/p>\n<p>Hay incontables platillos con huevos en la cocina mexicana, pero \u00e9stos son los que siempre preparo en casa. Son muy f\u00e1ciles de hacer, deliciosos y tienes resuelto el desayuno rapid\u00edsimo. Adem\u00e1s, siempre tengo aceite, huevos, jitomates, cebolla y ya sea chiles jalape\u00f1os o serranos a la mano.<\/p>\n<p>Aunque los ingredientes siempre son los mismos, hay muchas versiones, hay gente como mi pap\u00e1 que cocina muy poco los jitomates, mientras otros como yo los cocina hasta que parecen una pasta. La cantidad de ingredientes tambi\u00e9n var\u00eda. Yo uso m\u00e1s jitomates que mi pap\u00e1, pero a los dos nos gusta el picante. Mientras que a m\u00ed me gustan los huevos a la mexicana con tortillas de ma\u00edz, mi pap\u00e1 se los come con pan tostado (a algunos les encantan estos huevos con pan tostado con queso crema, que tambi\u00e9n es muy rico).<\/p>\n<p>Esto me hace pensar en lo flexible que es la comida mexicana. Puedes aprender la forma b\u00e1sica de preparar algo y luego modificarlo a tu gusto.<\/p>\n<p>Aunque yo quer\u00eda agregarles m\u00e1s jitomates mientras los prepar\u00e1bamos y me hubiera gustado cocinarlos m\u00e1s tiempo, tengo que admitir que su versi\u00f3n super\u00f3 a cualquiera que yo hab\u00eda preparado. Tal vez fue por la forma en que explic\u00f3 por qu\u00e9 sus huevos eran los m\u00e1s ricos del mundo, o por lo mucho que disfrut\u00f3 com\u00e9rselos y prepararme unos tacos (hab\u00eda dicho que no m\u00e1s tacos, pero uno no puede pasar muchos d\u00edas sin comer tacos, \u00bfsaben?), o a lo mejor solo estaba triste porque mi pap\u00e1 ya se iba.<\/p>\n<p>Ya no llegamos ni a los hot dogs ni a las hamburguesas. Hab\u00eda pensado en todos los lugares a los que pod\u00eda llevarlo para comerlos, pero se nos acab\u00f3 el tiempo. Eso si como dicen, tienes que dejar algo para la pr\u00f3xima vez. Tengo hasta entonces para recuperarme de todo lo que comimos.<\/p>\n<p>Mientras, les dejo una receta para Huevos a la Mexicana al estilo de mi pap\u00e1 con algunas de mis variaciones, para que puedas
