Es el chile m\u00e1s sembrado y usado en Michoac\u00e1n. En algunos pueblos puedes ver los patios de las casas cubiertos con tapetes donde miles de chilacas son secados al sol para convertirse en pasillas.<\/p>\n<p>Cuando est\u00e1n frescos, son largos con un color verde claro brillante. Una vez secos, ya como pasillas, son largos, delgados de color caf\u00e9 oscuro o negro con piel suave y arrugada. Tienen un sabor intenso, un poco picoso y dulce. Se usan en muchas cosas como salsas, sopas, guisados, condimentos, marinadas y moles.<\/p>\n<p>Tambi\u00e9n se conoce como chile negro y algunos lo llaman chile pasilla negro. Se puede sustituir por el chile seco New Mexico, aunque tiene otro sabor. No hay que confundirlos con el chile ancho, que en algunos lugares de Estados Unidos tambi\u00e9n se le dice pasilla. Aqu\u00ed hay un par de fotos para que puedan ver la diferencia.<\/p>\n<p>No se preocupen. Una vez que cocinen con un chile en particular, no lo confundir\u00e1n con otro en el futuro.
