{"id":3807,"date":"2011-05-28T18:22:25","date_gmt":"2011-05-28T18:22:25","guid":{"rendered":"https:\/\/patijinich.com\/es\/?post_type=recipe&#038;p=3807"},"modified":"2021-05-03T18:11:17","modified_gmt":"2021-05-03T18:11:17","slug":"mermelada-de-tomate-verde-con-limon-2","status":"publish","type":"post","link":"https:\/\/patijinich.com\/es\/mermelada-de-tomate-verde-con-limon-2\/","title":{"rendered":"Mermelada de tomate verde con lim\u00f3n"},"content":{"rendered":"<p>Cuando llegu\u00e9 a los Estados Unidos, conoc\u00ed el lado ex\u00f3tico del tomate verde.<\/p>\n<p>Creciendo en M\u00e9xico, los tomates verdes eran de rigor en cada mercado, y eran parte del mandado semanal, siempre presentes en nuestras comidas familiares al menos unas 3 veces a la semana, como en la salsa verde que le pon\u00edamos a casi todo: enchiladas, chilaquiles, encima del pescado, de guisos como el de carne deshebrada y papas, y a veces a los nopales.<\/p>\n<p>Son casi como la sal&#8230; qu\u00e9 rara ser\u00eda una cocina sin sal.<\/p>\n<p>Cuando nos mudamos a Texas, el \u00fanico lugar donde los pod\u00eda encontrar era en tiendas hispanas. Su c\u00e1scara es \u00e1spera, tiene una piel pegajosa a la que se le adhiere el polvo, y tiene un color verde poco atractivo&#8230;Pero quince a\u00f1os despu\u00e9s de que llegu\u00e9 aqu\u00ed, ya lo encuentras en tiendas tanto especializadas como en las grandes, y no es de extra\u00f1arse que muchas personas ya los incluyan en su compra.<\/p>\n<p>Una vez que se pelan y se lavan, su gloria natural empieza a brillar. Se pueden usar en platillos salados o dulces. Siempre son tan f\u00e1ciles de usar: ya los he preparado cocidos, crudos, en salsas, guisos, ensaladas y en uno de mis favoritos: mermeladas.<\/p>\n<p>El brillante y arriesgado chef mexicano Enrique Olvera fue quien me introdujo por primera vez al lado dulce de los tomates verdes, cuando vino a Washington a cocinar para un evento especial en el Instituto. \u00c9l y su sous chef prepararon una mermelada r\u00e1pida de tomate verde con agua, vinagre y az\u00facar y la sirvieron con una variedad de quesos y galletas. Una delicia.<\/p>\n<p>Jugando con esta idea, y como fan de la mezcla de la acidez del tomate verde con el sabor de los c\u00edtricos, despu\u00e9s de algunos intentos encontr\u00e9 lo que se ha vuelto algo obligado en nuestra casa. Comerte la mermelada a cucharadas, como yo. Morder\u00e1s no solo las semillas de los tomates verdes cubiertas de la deliciosa mermelada, sino que tambi\u00e9n morder\u00e1s esos deliciosos pedacitos caramelizados de c\u00e1scara de
