No todos son fans de ellas, en parte porque no son muy conocidas.<\/p>\n<p>Como tienen varias presentaciones, confunden a muchos: frescas en la vaina, frescas sin vaina, secas con c\u00e1scara, secas y peladas. Las frescas se encuentran durante la primavera y el verano.<\/p>\n<p>Pueden encontrarlas con c\u00e1scara, como las de la foto de arriba. Se ven lindas, pero hay que remojarlas, cocinarlas y pelarlas. Como dice mi mam\u00e1: \u201cAy no Pati, eso de pelar una por una es una monserga\u201d. No est\u00e1 mal si quieres una terapia relajante que te lleve horas. Si no, busca las habas secas y peladas, como las de la foto abajo. Hierve las habas con la olla parcialmente tapada, de 50 a 55 minutos. Estar\u00e1n suaves, cocidas y casi deshaci\u00e9ndose, justo lo que queremos.<\/p>\n<p>\u00bfVen el caldo? Es espeso y color paja. A\u00f1ade sal, pimienta, una pizca de comino y cocina todo durante unos 10 minutos m\u00e1s.<\/p>\n<p>Mientras, rebana unos bolillos, teleras o baguettes.<\/p>\n<p><img loading=\"lazy\" En una olla grande, calienta las habas y el caldo de pollo a fuego medio. Deja que hiervan y con la olla medio tapada, cocina las habas de 50 a 55 minutos, hasta que est\u00e9n cocidas y suaves. Retira del fuego y deja que se enfr\u00eden un poco. Lic\u00faa la mezcla por partes y ponla en un recipiente grande.<\/div><\/li><li id=\"wprm-recipe-9610-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Mientras lic\u00faa los jitomates, la cebolla y el ajo hasta obtener un pur\u00e9 suave. En una olla grande, calienta 3 cucharadas de aceite a fuego medio-alto. Una vez caliente, sin que llegue a humear, a\u00f1ade el pur\u00e9 de tomate. Cocina de 5 a 6 minutos, revolviendo ocasionalmente, hasta que espese y tenga un color m\u00e1s oscuro. Vierte el pur\u00e9 de habas. Salpimienta y cocina de 8 a 10 minutos m\u00e1s, hasta que se hayan integrado todos los sabores.<\/div><\/li><li id=\"wprm-recipe-9610-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Sirve la sopa en tazones individuales. Pon encima de cada taz\u00f3n una rebanada de pan tostado con aceite de oliva y espolvorea tiritas doradas de chile encima del pan.<\/div><\/li><li id=\"wprm-recipe-9610-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Nota: para hacer las tiritas de chile, fr\u00edelas r\u00e1pidamente en un sart\u00e9n con 1\/2 cm de aceite a fuego medio. Una vez que el aceite est\u00e9 caliente, sin que llegue a humear, fr\u00ede r\u00e1pidamente las tiritas, unos 2 segundos literalmente.
