{"id":4072,"date":"2014-07-14T07:19:05","date_gmt":"2014-07-14T07:19:05","guid":{"rendered":"https:\/\/patijinich.com\/es\/?post_type=recipe&#038;p=4072"},"modified":"2021-05-03T18:11:31","modified_gmt":"2021-05-03T18:11:31","slug":"pay-de-limon","status":"publish","type":"post","link":"https:\/\/patijinich.com\/es\/pay-de-limon\/","title":{"rendered":"Pay de Lim\u00f3n"},"content":{"rendered":"<p>El pay en Estados Unidos es comida reconfortante, en M\u00e9xico, sabe a otra cosa.<\/p>\n<p>Es un pedazo del sue\u00f1o americano, de la vida ideal en los Estados Unidos igual que las malteadas, una pel\u00edcula de Hollywood y un par de jeans <em>Levi\u00b4s<\/em>.<\/p>\n<p>En la d\u00e9cada de los 80\u00b4s, cuando ten\u00eda la misma edad que Sami ahorita, mis amigos y yo \u00edbamos por una rebanada de pay luego de ver la m\u00e1s reciente pel\u00edcula de Hollywood, que no era tan seguido. Una vez que la pel\u00edcula llegaba a M\u00e9xico, hab\u00eda que formarnos para tratar de comprar los boletos. Faltaban d\u00e9cadas enteras para Moviefone y los boletos por Internet estaban a a\u00f1os luz.<\/p>\n<p>Hab\u00eda un cine hasta arriba de la Torre Comermex, un edificio alto y moderno en la esquina de Perif\u00e9rico y Av. Reforma. Aunque no sabemos con exactitud, mi mam\u00e1 y yo creemos que fue nombrada as\u00ed por Shirley Temple. Ya sentados, revisaba con detenimiento el men\u00fa de postres. Me encantaba ver todas las opciones de pays, aunque eran como tres en realidad.<\/p>\n<p>Todos se serv\u00edan fr\u00edos. Hab\u00eda pay de chocolate, pay de pl\u00e1tano con crema batida y pay de lim\u00f3n. Despu\u00e9s de pedir la rebanada, pod\u00edas ver c\u00f3mo la mesera sacaba el pay del refrigerador. Tambi\u00e9n era impresionante como no se deshac\u00eda mientras te lo com\u00edas.<\/p>\n<p>Estaba de moda la comida popular, y lo sigue estando hoy. Vendieron el edifico y los nuevos due\u00f1os lo remodelaron, ahora es un banco. Ya no hay pays ah\u00ed.<\/p>\n<p>Esta receta sabe al pay de lim\u00f3n de una \u00e9poca que ya no volver\u00e1.<\/p>\n<p>Me recuerda al cl\u00e1sico pay Key Limes, pero \u00e9ste usa limones mexicanos y aprovecha el lim\u00f3n completo, desde la ralladura hasta el jugo. La acidez de los limones se compensa con la crema condensada dulce y cremosa.
