No s\u00e9 por qu\u00e9 pensaron que ser\u00eda una buena idea, fue espantosa.<\/p>\n<p>Lo bueno era que nuestra nana Sari, a quien llam\u00e1bamos Nana Tochito y ven\u00eda de Oaxaca, preparaba toda una comida navide\u00f1a para consentirnos y celebrar la Navidad, aunque no tuvi\u00e9ramos un \u00e1rbol como nuestros amigos. Gracias a mi Nana, nos val\u00eda un cacahuate. Intercambi\u00e1bamos regalos y com\u00edamos gelt, pavo, ponche y nuestros favoritos, los bu\u00f1uelos.<\/p>\n<p>Se preparan sobretodo durante Navidad y A\u00f1o Nuevo, y representan celebraci\u00f3n pura. Ligeros, delgados y crujientes, pero aguantadores. Nadie sabe por qu\u00e9 no se rompen cuando los apilan en los puestos o canastas para venderlos.<\/p>\n<p>Son irresistibles, especialmente ba\u00f1ados en jarabe dulce de piloncillo, y se pueden comer enteros o romperlos en pedazos. Hay bu\u00f1uelos con otras formas e ingredientes.<\/p>\n<p>A m\u00ed me gusta hacerlos con harina, mantequilla &#8211; en lugar de manteca o manteca vegetal-, huevos, jugo de naranja fresco, un poco de az\u00facar y una pizca de sal.<\/p>\n<p>Algunas recetas antiguas usan tequesquite &#8211; agua con salitre o agua donde se hirvieron las c\u00e1scaras de los tomates verdes, para fermentar la masa, darle volumen y hacerla m\u00e1s esponjosa y crujiente mientras se dora. Como arriba, estar\u00e1 esponjada y suave.<\/p>\n<p>Divide la masa en 12-15 bolas. Parecer\u00e1 que la masa quiere regresarse a ser una bola, por lo que tienes que extenderla con cuidado, voltearla y volverla a extender. Hay muchas formas de dejarlos as\u00ed, yo los extiendo dos veces y otros chefs en M\u00e9xico los estiran en una toalla arriba de las rodillas, por eso se les conoce como bu\u00f1uelos \u201cde rodilla\u201d. Deja que el piloncillo se disuelva en el agua caliente durante unos minutos. Hierve a fuego medio unos 15 minutos, hasta que parezca jarabe. Retira del fuego. Retira la canela y cuela el jarabe si es necesario.<\/div><\/li><li id=\"wprm-recipe-9553-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para hacer los bu\u00f1uelos, bate la harina, polvo para hornear, la sal y el az\u00facar en la batidora con el aditamento de gancho. Haz lugar en medio y a\u00f1ade el huevo, el licor de an\u00eds y el jugo de naranja. Bate a velocidad baja durante unos minutos. Agrega la mantequilla y s almendras y bate de 10 a 12 minutos m\u00e1s. La masa debe estar suave y el\u00e1stica.<\/div><\/li><li id=\"wprm-recipe-9553-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Engrasa un recipiente grande. Pasa la masa al recipiente y t\u00e1palo con una toalla de cocina. Deja reposar de 20 a 30 minutos. Divide la masa en 12-15 bolas, de aprox. 4 cm, y ponlas en una charola para hornear. T\u00e1palas con una toalla de cocina.<\/div><\/li><li id=\"wprm-recipe-9553-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Espolvorea con harina el rodillo y la superficie donde vas a trabajar  Una por una, extiende las bolas en c\u00edrculos de 10 a 15 cm de di\u00e1metro. Ponlos encima de una mesa o superficie. Comienza con los que extendiste primero y vu\u00e9lvelos a extender, poniendo harina en la superficie y el rodillo despu\u00e9s de extender cada uno. Exti\u00e9ndelos lo m\u00e1s que puedas sin romperlos. Los cocineros mexicanos usualmente los extiendes con las manos como si fueran pizzas, y a veces usan recipientes con una toalla encima y los extienden con cuidado. Para mi es m\u00e1s f\u00e1cil volverlos a extender.<\/div><\/li><li id=\"wprm-recipe-9553-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon cada bu\u00f1uelo extendido en la mesa o superficie y sigue con los dem\u00e1s. Deja que todos se sequen por al menos 30 minutos, Deben quedar tan delgados como una hoja de papel o cartulina, y deben sentirse secos.<\/div><\/li><li id=\"wprm-recipe-9553-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En un sart\u00e9n de 30 cm, calienta suficiente aceite a fuego medio-alto. Una vez que el aceite est\u00e9 muy caliente, pero no humeando, fr\u00ede un bu\u00f1uelo a la vez. Comenzar\u00e1n a burbujear. Fr\u00ede cada uno 20 segundos por lado hasta que est\u00e9n dorados, luego volt\u00e9alos con una pinza para dorarlos del otro lado.
