Es tambi\u00e9n una de las recetas que m\u00e1s me han pedido despu\u00e9s de los jalape\u00f1os en escabeche y las galletas de piloncillo y finalmente, aqu\u00ed les tengo la receta. Prometo publicar otras peticiones que me han mandado por email lo m\u00e1s r\u00e1pido que pueda.<\/p>\n<p>El pastel de tres leches es un pastel muy h\u00famedo, de sabor casero. Es un pastel de vainilla completamente remojado en una salsa dulce de tres leches: leche condensada, evaporada y regular, aunque algunas recetas sustituyen la leche regular con crema espesa. El pastel a veces lleva bet\u00fan de crema batida fresca, absolutamente necesario, y a veces es merengue o <em>ganache<\/em> de chocolate.<\/p>\n<p>Cuando era ni\u00f1a, hab\u00eda una pasteler\u00eda llamada La Gran V\u00eda, donde hac\u00edan un pastel de tres leches tan rico, que \u00edbamos todos los domingos por un pastel aunque quedara lejos de la casa. Ahora es toda una cadena de panader\u00edas, pero hace mucho que no pruebo uno de sus pasteles. Esta receta es lo m\u00e1s parecido a lo que recuerdo con nostalgia.<\/p>\n<p>Para hacer el pastel lo m\u00e1s esponjoso posible, hay que batir las claras hasta que formen ondas suaves. A\u00f1ade el az\u00facar y sigue batiendo hasta que formen ondas duras.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-7778\" hasta que est\u00e9n cremosas y de color amarillo p\u00e1lido y a\u00f1ade vainilla.<\/p>\n<p>Les comparto una foto de la vainilla de Papantla, su lugar de origen que realmente me encanta, y el frasco molde.<\/p>\n<p>Es una masa sencilla, claras, az\u00facar, yemas, vainilla y harina. Es un postre sin complicaciones y neutral, y se pueden hacer varias versiones. Le puedes poner fruta encima o como relleno. Las fresas funcionan muy bien.<\/p>\n<p>Aunque est\u00e1 mojado por la salsa, retiene muy bien su forma y el bet\u00fan de crema batida le da un contraste muy rico. Incorpora lentamente el az\u00facar y sigue batiendo hasta que se formen picos m\u00e1s duros. Apaga la batidora y con una esp\u00e1tula, pasa las claras a un taz\u00f3n grande.<\/div><\/li><li id=\"wprm-recipe-9676-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Enjuaga la batidora y pon ahora las yemas y bate a velocidad media por unos 5 \u00f3 6 minutos, o hasta que las yemas est\u00e9n cremosas y esponjosas y su color est\u00e9 m\u00e1s tenue, casi color crema. Incorpora la vainilla y contin\u00faa batiendo la mezcla por 1 minuto m\u00e1s.<\/div><\/li><li id=\"wprm-recipe-9676-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Vac\u00eda la mezcla de yemas a la mezcla de claras, y usando la esp\u00e1tula, combina ambas con movimientos circulares hasta que la mezcla est\u00e9 homog\u00e9nea. Hazlo con cuidado para no perder mucho el volumen de las claras batidas. Por \u00faltimo, incorpora la harina con la esp\u00e1tula, pas\u00e1ndola por el interior del molde para cerciorarte de que no haya quedado harina sin revolver.<\/div><\/li><li id=\"wprm-recipe-9676-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Vierte la masa en el molde para pastel ya engrasado y hornea de 22 a 25 minutos, o hasta que un palillo salga limpio del centro del pastel. El pastel puede estar un poco h\u00famedo todav\u00eda, pero no crudo y tendr\u00e1 un color dorado.<\/div><\/li><li id=\"wprm-recipe-9676-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Ya que est\u00e9 fr\u00edo, transfiere el pastel a un plat\u00f3n. Qu\u00edtale el papel encerado de abajo, y volt\u00e9alo. El plat\u00f3n debe tener suficiente espacio tanto para el pastel como para la salsa de tres leches que vas a preparar. Usa un tenedor para hacer hoyos en todo el pastel para que absorba bien la salsa.<\/div><\/li><li id=\"wprm-recipe-9676-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Combina en un recipiente la leche condensada, la evaporada, la leche normal y la vainilla. Vierte esta mezcla sobre todo el pastel. Puede parecer mucha salsa, pero el pastel la absorber\u00e1 toda.<\/div><\/li><li id=\"wprm-recipe-9676-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En la batidora, bate la crema con el az\u00facar glass a velocidad media hasta que se hagan picos duros. Cubre el pastel con la crema y refrigera.
