Las hojas cambian de color en oto\u00f1o y las juntamos en grandes montones para que los ni\u00f1os brinquen en ellas. Me encanta el olor de los vientos de invierno y me divierte quitarnos los abrigos, gorros y guantes, algo que nunca hice cuando era ni\u00f1a.<\/p>\n<p>Pero extra\u00f1o el flan de coco que com\u00eda en Acapulco, cuando era ni\u00f1a. Mi favorito era de Pipo, un restaurante en la Costera. Ten\u00eda una capa cremosa y suave encima y una capa de coco suave y chicloso abajo. Para hacerlo, he probado un par de versiones y \u00e9sta es la m\u00e1s rica y sencilla.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-large wp-image-8244\" src=\"http:\/\/patijinich.com\/es\/wp-content\/uploads\/sites\/3\/2009\/11\/Flan-de-Coco-Playero-1-1024x687.jpg\" alt=\"Flan de Coco Playero 1\" width=\"912\"><\/p>\n<p>Primero, prepara el caramelo. Algunos mezclan el az\u00facar con jugo de lim\u00f3n o agua, pero yo lo hago de la manera tradicional: az\u00facar a fuego medio-bajo. Pon el az\u00facar en una olla e incl\u00ednala un par de veces mientras se derrite el az\u00facar. Entre m\u00e1s claro sea su color, m\u00e1s ligero ser\u00e1 su sabor. Lo encuentras en <em>Whole Foods<\/em> o <em>Trader Joe\u00b4s<\/em>. Si est\u00e1 endulzado, el flan queda demasiado dulce.<\/p>\n<p>Vierte una lata de leche condensada, una de agua, un par de huevos y el coco en la licuadora.
