Me encantan. De hecho, muchas de mis memorias de la infancia los incluyen.<\/p>\n<p>Como cuando me sentaba a acompa\u00f1ar a mi mam\u00e1 a que se comiera sus huevos revueltos con jam\u00f3n, acompa\u00f1ados de pan negro tostado con una embarradita de miel, antes de que se fuera a trabajar.<\/p>\n<p>Como cuando mi pap\u00e1 me ense\u00f1o c\u00f3mo abrir un huevo pasado por agua, usando una cucharita peque\u00f1a para romper la punta de encima de la parte blanca del huevo, para poder a\u00f1adir mantequilla y sal a la yema todav\u00eda calientita. Luego s\u00faper r\u00e1pido meti\u00f3 un pedacito de pan tostado en la yema y me dio esa primera mordida.<\/p>\n<p>Como la primera vez que mi mam\u00e1 finalmente me dej\u00f3 cocinar y me encarg\u00f3 que preparara los huevos revueltos del desayuno dominical. Me dio los huevos. El recipiente. La sart\u00e9n. La mantequilla. Sac\u00f3 la sal de la alacena. Se olvid\u00f3 de cerrar la alacena. No pude resistir la tentaci\u00f3n y le ech\u00e9 un poco de lo que hab\u00eda en cada botellita de especies a los huevos. La paprika con su rojo intenso, la bella flor de an\u00eds, el comino con su profundo amarillo tostado, pedacitos de una rama de canela\u2026 bueno, ya saben como terminaron esos huevos. Desde entonces aprend\u00ed a mantener mi entusiasmo, pero tratando de controlarlo cuando estoy creando recetas.<\/p>\n<p>Encuentro que los huevos son uno de los ingredientes m\u00e1s fascinantes. Son accesibles. Son preciosos. Son baratos. Son vers\u00e1tiles tambi\u00e9n, ya que los puedes comer en cualquier comida y momento del d\u00eda, ya sea como ingrediente central o acompa\u00f1ante. Adem\u00e1s, junto con la leche y las semillas, es de los ingredientes m\u00e1s nutritivos del planeta. Y por si eso no fuera suficiente, se pueden usar para tantos prop\u00f3sitos: adem\u00e1s de comerse as\u00ed como huevos, pueden actuar como un ingrediente que une a otros (piensa en alb\u00f3ndigas), como uno que espesa (como en un mousse de chocolate), como uno que aumenta el volumen (como en un souffl\u00e9) o como un ingrediente que ayuda a que otros brillen (como en un omelet).<\/p>\n<p>As\u00ed pues, no sorprende que me cueste trabajo empezar mi d\u00eda sin comerme unos huevos. La manera m\u00e1s com\u00fan en que me los como, es como mi mam\u00e1 se los com\u00eda, revueltos con jam\u00f3n. Esto seguido de huevos a la mexicana, a veces as\u00ed nada m\u00e1s o con ejotes, calabacitas o champi\u00f1ones. Me matan los huevos ahogados en cualquier salsa, ya sea <a href=\"\/es\/recipe\/salsa-verde\/\">salsa verde<\/a>, <a href=\"\/es\/recipe\/huevos-en-salsa-martajada\/\">salsa martajada<\/a>, o <a href=\"\/es\/recipe\/huevos-rabo-de-mestiza\/\">roja con rajas de chiles poblano<\/a>. Ni que decir de las <a href=\"\/es\/recipe\/enchiladas-de-huevo-con-salsa-de-frijol-con-chorizo-y-queso-fresco\/\">enchiladas ma\u00f1aneras que tienen huevos<\/a>, geniales para cuando hay visitas. En realidad cualquier manera en que se usen los huevos, en tacos, <a href=\"\/es\/recipe\/sr-sandwich\/\">s\u00e1ndwiches<\/a>, crepas o <a href=\"\/es\/recipe\/sandwich-de-tocino-lechuga-y-tomate-con-queso-de-cabra-con-chipotle\/\">tortas<\/a>, yo me lo como feliz.<\/p>\n<p>Pero, ok, para llegar al punto de este art\u00edculo: me fascinan tanto los huevos que el hecho de que existan los huevos rellenos me vuelve loca. No s\u00f3lo porque se pueden comer m\u00e1s all\u00e1 del desayuno con seguridad, si no porque adem\u00e1s me parece una manera tan bella y deliciosa de honrar al ingrediente.<\/p>\n<p>Si hay huevos rellenos en alg\u00fan men\u00fa, de seguro los voy a ordenar. Si voy a una fiesta o coctel en donde hay huevos rellenos, s\u00ed, yo soy esa se\u00f1ora loca que va tras la charola de huevos rellenos.<\/p>\n<p>Aqu\u00ed est\u00e1 mi versi\u00f3n. Los llamo Huevos Rellenos Doblemente Sazonados porque llevan dos de mis condimentos mexicanos favoritos, los chipotles en adobo y los chiles jalape\u00f1os en escabeche. As\u00ed que yo creo que ya encontramos que es lo que tienes que hacer bien pronto, ve a la cocina y pru\u00e9balos en cuanto puedas.<\/p>\n<div id=\"recipe\"><\/div><div Pon la olla a fuego alto-mediano y una vez que hierva, deja que hierva un minuto m\u00e1s. Tapa la olla, apaga el juego y deja que los huevos se cocinen as\u00ed 10 minutos.  Retira los huevos del agua y deja que enfr\u00eden. Una vez que los puedas manejar, pela la cascara y ponlos en una tabla de picar.<\/div><\/li><li id=\"wprm-recipe-8515-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Corta los huevos pelados por la mitad usando un cuchillo filoso. Con una cucharita, saca las yemas y ponlas en una procesadora de alimentos, dejando las claras en la tabla. Junto con las yemas, pon la mayonesa, la crema, la mostaza, la salsa de los chipotles, el vinagre de los chiles en escabeche, el vinagre blanco, la mantequilla y la az\u00facar. Procesa hasta que este totalmente combinada y esponjosa la mezcla, dale por lo menos un minuto.<\/div><\/li><li id=\"wprm-recipe-8515-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon un poco del tocino picadito en las claras cocinadas. Encima, usando una bolsa de pl\u00e1stico y usando una punta de estrella \u2013 o tambi\u00e9n puedes usar una cucharita- rellena los huevos con la mezcla de las yemas.
