Una vez que el ma\u00edz ha pasado por el proceso de nixtamal y se ha transformado en masa, se hacen muchos platos diferentes. Muchas variedades diferentes de ma\u00edz criollo se contaminaron con ma\u00edz gen\u00e9ticamente modificado.
