Sin embargo, las variedades de ma\u00edz criollo han sido una piedra angular de la cocina mexicana y de los chefs en la Ciudad de M\u00e9xico, incluido Enrique Olvera.<\/p>\n<p>El Chef Olvera ha utilizado el ma\u00edz criollo en sus restaurantes durante a\u00f1os ya sea para hacer tortillas frescas, tamales, gorditas u otros antojitos que se preparan despu\u00e9s de que el ma\u00edz pasa el proceso de nixtamalizaci\u00f3n para convertirse en masa. Una peque\u00f1a tortiller\u00eda en la Condesa dirigida por Enrique y su equipo, cuyo restaurante principal Pujol est\u00e1 en la lista de los 50 mejores restaurantes del mundo de San Pellegrino.<\/p>\n<p>El equipo detr\u00e1s de Molino dise\u00f1\u00f3 un peque\u00f1o men\u00fa que va desde un taco de aguacate envuelto en hoja santa, un elote cubierto con mayonesa de hormiga chicatana, caf\u00e9 y chile coste\u00f1o o hasta agua fresca de ma\u00edz para rebajarlo todo.
