Su nombre viene de la ciudad de Cotija en el estado de Michoac\u00e1n. Se ha producido en la regi\u00f3n por m\u00e1s de 400 a\u00f1os. Tradicionalmente, despu\u00e9s de que las vacas com\u00edan en los altos pastos durante la \u00e9poca de lluvias en zonas dentro de los estados de Jalisco y Michoac\u00e1n, los productores de queso bajaban sus quesos para que se a\u00f1ejaran en Cotija durante por lo menos dos meses.<\/p>\n<p>El queso Cotija es un queso duro, prensado, maduro y seco con una consistencia muy f\u00e1cil de desmoronar. Tiene bastante sal, as\u00ed que no es un queso que te quieres comer por si s\u00f3lo a mordidas ni tampoco necesariamente ponerlo en una gran pieza en un tabl\u00f3n de quesos. Pero es perfecto para dar un toque acidito y saladito a cualquier antojo y muchos platillos, desde dulces a salados. Puedes desmenuzarlo en tacos, enchiladas, elotes locos o esquites, ensaladas y mucho m\u00e1s para dar un sabor muy \u00fanico.<\/p>\n<p>Aunque el queso Cotija aut\u00e9ntico si tiene una marca colectiva, los productores de Cotija todav\u00eda no logran la deseada y prestigiosa denominaci\u00f3n de origen. Su disponibilidad en los Estados Unidos es bastante reciente,\u00a0\u00a0quiz\u00e1s no ha llegado a la d\u00e9cada.<\/p>\n<p>Por lo general, puedes encontrarlo en forma cuadrada o redonda, a veces cortado en trozos, o ya de una vez desmoronado en bolsita.
