Ingredients

  • 1 habanero chile seeded and finely chopped (about 1 tablespoon)
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon coarsely chopped cilantro leaves and upper part of stems
  • 1 tablespoon mayonnaise
  • 1/2 cup peeled and chopped carrot
  • 1 large egg
  • 3 tablespoons bread crumbs
  • 3/4 teaspoon kosher or sea salt plus more to sprinkle on burgers
  • 1/2 teaspoon freshly ground black pepper
  • 2 pounds medium-sized shrimp rinsed, peeled and patted dry, divided
  • Vegetable oil to brush on the burgers
  • 6 brioche or burger buns lightly toasted before serving
  • 6 butter lettuce leaves
  • 1 batch Habanero Tartar Sauce
  • 12 slices of bacon cooked until crisp
  • 1 ripe avocado halved, pitted, thinly sliced

To Prepare

  • In the bowl of a food processor, add the habanero, lime juice, cilantro, mayonnaise, carrot, egg, bread crumbs, salt, pepper, and a quarter pound of the shrimp. Pulse until completely smooth. Add the remaining shrimp and pulse a couple times, until you have a coarse ground meat mixture.
  • Cover a small sheet pan or tray with wax paper. Put some lukewarm water in a bowl and use it to wet your hands as you shape the mixture onto 6 burger patties. Place them on the prepared baking sheet, cover with plastic wrap, and refrigerate for at least 15 to 30 minutes.
  • Heat a grill or grill pan on medium heat. Generously brush the shrimp burger patties with oil and sprinkle with salt. Place on the grill or grill pan and cook for about 5 minutes per side, until browned on both sides and the color inside has changed to a darker pink.
  • Lightly toast the buns in the oven or on a heated skillet. On the bottom half, place a lettuce leaf, some habanero tarter sauce, a shrimp burger, a couple slices of bacon, a couple slices of avocado, more tartar sauce to taste, and top with the top bun. Repeat with the rest of the burgers.

    I’m planning to make this yummy looking burger, but I’m a bit concerned about the habanero peppers being too hot. What can I use in place of them, and do you think they’re hotter than a jalapeño?

      I do think Habaneros are hotter than jalapenos, maybe consider adding half to the recipe or just little by little to the sauce and test it to your liking 🙂

    I have never been a huge fan of shrimp (other than maybe in a good Mexican ceviche now and again) but your recipe and how you made it looked so fabulous I had to try making this. And I’m so glad I did because I loved it!! Soy nieta de Zacatecas así que me sentí valiente y le agregué más habanero. I did too much, stick with Patti’s recipe … is fabulous!

    BEST Shrimp Burger recipe EVER! Although we do substitute the habanero for pickled jalapeños and it works out perfect in both the burger and the tartar sauce. Absolutely love the tartar sauce! Anyways we make these for family get together‘s because everyone loves them so much. Everyone calls them the shrimp on shrimp on Shrimp Burgers. Lol
    Oh and instead of doing the avocado on them I make my avocado, jalapeño, tomatillo salsa to spread on the bun with the Tartar sauce.

    I made this last night and what a hit it was! Left overs tonight, and even better. Removed seeds and ribs from habaneros and the spice was just right! LOVED the addition of the bacon and avocado…..plus the tartar sauce took it to a whole different level! I have sent this recipe to oh, so many relatives and friends. Love you and love your show, one of the reasons I made this was it looked soooo good when your son (Juju?) bit into it!

    I used olive oil spray on my hands instead of warm water. Adds a nice taste to the patty and lessons the need for much oil on the griddle. Great recipe for SuperBowl watching with small family group!!

    I Made this but could not find Habenero peppers so instead I used pickled Jalepenos from “La Morena” and this burger was still a show stopper!!! the home made tarter sauce was so yummy… cant wait to make more and more new dishes

    I would be okay with habanero peppers but my family has a much milder palette than me. What would be an alternative to the habanero that would compliment the shrimp?

      Hi Melissa, you can mellow the spiciness in this recipe by adding less habanero and making sure all stems and seeds are removed. If it is still to hot for you, I suggest to add a bit of chipotle in adobo or jalapeno. Good luck!
