Jamaica Popsicles recipe from Pati's Mexican Table Season 1, Episode 6 “Hibiscus Flowers”

Ingredients

To make Jamaica Concentrate (makes about 5 cups):

  • 8 cups water
  • 2 cups, about 2-3 ounces, dried hibiscus flowers, depending on how tightly you pack the cups
  • 1 1/2 cups sugar, or to taste
  • 2 tbsp fresh lime juice, or to taste

To make Jamaica Popsicles:

  • 2 cups hibiscus flower/jamaica concentrate
  • 3/4 cup mango, peeled, pitted diced
  • Chocolate morsels to taste, optional
  • Shredded coconut to taste, optional
  • For adult fun you can make them grown up and add some Rum!

To Prepare

To make the concentrate:
  • In a saucepan, pour 8 cups of water and place over high heat. Once it comes to a boil, add the jamaica flowers, simmer at medium heat for 10 minutes and turn off the heat. When cool, strain into a heat proof glass or plastic water jar. Add the sugar and lime juice, mix well, cover and refrigerate.
To make the popsicles:
  • Pour 2 cups of jamaica concentrate into 8, 4 ounce molds. Add pieces of mango, chocolate and coconut. Place in freezer until set and frozen, about 4 to 5 hours. Enjoy!

  2. Got the hibiscus flowers from Amazon in 2 days. I would be so grateful if anyone has calculated the carbs in this recipe. As one of the 34.2 million diabetics in the US who have to calculate every carb we eat, it would be tremendous to have nutrition information attached to your recipes. Insulin keeps me alive because I lost my pancreas to cancer so I try to avoid recipes without nutrition but I am nutty about so many of yours, I can’t help myself, I just have to try them!❤️

  3. Hola Pati, I decided to make a batch of Jamaica tea yesterday with flowers I had brought back from Oaxaca. I used Splenda and it turned out delicious. I love the idea of popsicles for summer! Are you planning anymore zooms? I participated in one you did making guacamole and it was so much fun!

    1. Hello Jo, I am sure your Jamaica tea was awesome and you can easily turn it into popsicles!   10. Hola Pati, I have several Hibiscus Bushes growing in my front yard and in the drive way.
    2 are red and the rest assorted colors. Could I use the drying red flowers from home or
    should I use the ones from the market. A few friends say I may and others say no, I must only use flowers from the market because mine are not the right kind or safe.
    I only use organic food and fertilizers, if anything, when used.
    Your say, of course, is the decision maker.
