Pon la charola en el asador u horno durante 10 minutos hasta que todo est\u00e9 chamuscado y suave, volteando los ingredientes una vez a la mitad del tiempo. Saca del horno y cuando se hayan enfriado, pela los ajos. Tambi\u00e9n los puedes asar en un comal o sart\u00e9n precalentado a fuego medio-bajo.<\/div><\/li><li id=\"wprm-recipe-11501-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon los jitomates, los ajos pelados y la cebolla en la licuadora.<\/div><\/li><li id=\"wprm-recipe-11501-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Tuesta los chiles guajillos y anchos en un comal o sart\u00e9n caliente durante 1 minuto volte\u00e1ndolos algunas veces, hasta que se tuesten ligeramente y suelten el aroma. Pon los chiles en una olla mediana, c\u00fabrelos con agua y hierve durante 10 minutos, hasta que est\u00e9n suaves y rehidratados.<\/span><\/div><\/li><li id=\"wprm-recipe-11501-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Pasa los chiles rehidratados junto con 1 taza del agua de cocci\u00f3n, a la licuadora con los dem\u00e1s ingredientes. Agrega el jugo de naranja, el vinagre, el piloncillo, la mejorana, el tomillo, el or\u00e9gano, la sal, la pimienta y licua hasta tener una salsa suave. Deja enfriar.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para rostizar la carne:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11501-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Precalienta el horno a 160 C con la rejilla en la parte de abajo.<\/div><\/li><li id=\"wprm-recipe-11501-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Con un cuchillo para pelar peque\u00f1o, pica la carne varias veces para que absorba la marinada. Pon la carne en un refractario o cazuela grande, c\u00fabrela con la marinada* y pon las hojas de laurel encima. Ponle la tapa a la olla o c\u00fabrela muy bien con papel aluminio.<\/span><\/div><\/li><li id=\"wprm-recipe-11501-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Coloca la olla en el horno y hornea durante 3 horas o hasta que la carne est\u00e9 muy suave. Saca el refractario del horno y sube la temperatura a 190 C. Quita la tapa o el papel aluminio con cuidado. Ba\u00f1a la carne con la salsa y regresa al horno. Hornea de 20 a 30 minutos m\u00e1s, hasta que la carne se dore por encima.<\/span><\/div><\/li><li id=\"wprm-recipe-11501-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pasa la carne a una table para cortar y deja reposar. Mientras, cocina la salsa que qued\u00f3 en la cacerola a fuego medio-alto durante 15-20 minutos, hasta que se haya espesado y tenga consistencia de gravy.
