wprm-block-text-normal\">Primero, prepara los chiles para rellenarlos:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11983-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Rostiza o tatema los chiles Anaheim chiles en una charola para hornear en el horno a temperatura alta, directamente en el asador o en la hornilla de la estufa. Yo prefiero meterlos al horno porque puedes rostizar m\u00e1s chiles al mismo tiempo, y me parece m\u00e1s r\u00e1pido y f\u00e1cil. Sin importar el m\u00e9todo que uses, volt\u00e9alos cada 2 o 3 minutos para un total de 6 a 9 minutos. Deben verse quemados y ampollados por afuera, y la pulpa de adentro debe estar cocida, no quemada.<\/span><\/div><\/li><li id=\"wprm-recipe-11983-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Una vez que est\u00e9n tatemados y calientes, pon los chiles en una bolsa de pl\u00e1stico y ci\u00e9rrala bien. Deja que suden los chiles por al menos 10 minutos. Por \u00faltimo, ponlos bajo un chorro delgado de agua fr\u00eda o en un recipiente con agua, para quitarles la piel quemada, que debe salir f\u00e1cilmente. Haz un corte lateral en cada chile y quita todas las semillas y venas.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Segundo, rellena los chiles:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11983-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Rellena cada chile con 1\/3 de taza de queso o lo que le quepa, siempre y cuando los puedas cerra; puedes usar un palillo para cerrarlos.<\/span><\/div><\/li><li id=\"wprm-recipe-11983-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon 1\/2 taza de harina en un plato, pasa los chiles rellenos por la harina y dejan que reposen. La cobertura de harina va a ayudar a que el capeado se mantenga en los chiles.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Tercero, prepara el capeado:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11983-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En una batidora, bate las claras hasta que se formen ondas firmes. Con cuidado, agrega las yemas a velocidad baja y bate la mezcla solo para incorporar todo, unos segundos nada m\u00e1s.<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Cuarto, capea y fr\u00ede los chiles:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-11983-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">En una olla grande, vierte aceite hasta tener 1 cm de profundidad y calienta a fuego medio, medio-alto. Cuando est\u00e9 caliente, prueba el aceite metiendo un pedazo de tortilla o de pan \u2014 si hay burbujas activas y alegres alrededor, pasa cada chile relleno y enharinado por la mezcla de capeado, asegur\u00e1ndote de que queden completamente cubiertos. Luego, ponlos con cuidado en el aceite, tratando de dejar boca arriba el lado abierto y cerrado con el palillo. Pon todos los chiles que quepan en el sart\u00e9n sin encimarlos. Fr\u00edelos unos 2 minutos por lado, hasta que est\u00e9n dorados. Aseg\u00farate de voltearlos cuidadosamente con una cuchara con ranuras.
