class=\"wprm-recipe-instruction-group\"><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-12073-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Enjuaga y talla las almejas bajo un chorro delgado de agua fr\u00eda. Tira las que est\u00e9n rotas o abiertas. Escurre bien.<\/div><\/li><li id=\"wprm-recipe-12073-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En una olla mediana, pon los chiles, jitomates y dientes de ajo, c\u00fabrelos con agua y deja que hiervan a fuego medio-alto. Cocina de 10 a 12 minutos, hasta que los chiles se hayan rehidratado y el ajo y los jitomates est\u00e9n cocidos, suaves y aguados, pero sin deshacerse. Con una cuchara con ranuras, pasa los jitomates, los chiles y el ajo a la licuadora, junto con 1 taza del agua de cocci\u00f3n, y deja que se enfr\u00eden ligeramente. Agrega el comino, or\u00e9gano y 1 cucharadita de sal. Licua hasta tener un pur\u00e9 suave. Aparta.<\/div><\/li><li id=\"wprm-recipe-12073-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Calienta 2 cucharadas de aceite de oliva y 2 cucharadas de mantequilla a fuego medio-alto en una olla o sart\u00e9n grande con tapa. Cuando la mantequilla empiece a espumar, agrega la cebolla, el pimiento morr\u00f3n, el puerro y la zanahoria y cocina revolviendo con frecuencia de 5 a 6 minutos, hasta que las verduras se suavicen y las orillas se empiecen a dorar. Agrega el vino o cerveza y 1\/2 cucharadita de sal y hierve hasta que el vino o cerveza se evaporen, de 4 a 5 minutos. Las verduras deben estar suaves y h\u00famedas, no mojadas.<\/span><\/div><\/li><li id=\"wprm-recipe-12073-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Vierte el pur\u00e9 de tomate sobre las verduras, deja que hierva y agrega las almejas. Tapa la olla, reduce el fuego a medio y cocina de 7 a 8 minutos, hasta que las conchas se abran. Apaga el fuego y deja reposar 5 minutos m\u00e1s. Quita la tapa y con una cuchara de ranuras o pinzas, saca todas las almejas y ponlas en un taz\u00f3n. Pasa la salsa y las verduras a un recipiente o taza medidora resistente al fuego y limpia la olla o sart\u00e9n. Agrega 5 tazas de agua o caldo.<\/span><\/div><\/li><li id=\"wprm-recipe-12073-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Saca de la concha 3 docenas de almejas y desecha las conchas.<\/span><\/div><\/li><li id=\"wprm-recipe-12073-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">En la olla o sart\u00e9n, calienta las 3 cucharadas restantes de aceite de oliva a fuego medio-alto hasta que est\u00e9 caliente, pero no salga humo. Agrega el arroz y d\u00f3ralo de 3 a 4 minutos, revolviendo constantemente, hasta que truene, se vuelva blanco lechoso y se sienta m\u00e1s pesado al revolverlo. No dejes que se ponga caf\u00e9. Agrega la salsa y verduras que apartaste y la cucharadita restante de sal. Revuelve bien, agrega todas las almejas con y sin concha, deja que hierva otra vez, tapa y reduce el fuego a bajo. Cocina durante 15 minutos, hasta que casi todo el l\u00edquido se haya evaporado y el arroz se haya cocido.
