class=\"wprm-recipe-ingredient-notes wprm-recipe-ingredient-notes-faded\">m\u00e1s las necesarias para forrar la vaporera<\/span><\/li><li class=\"wprm-recipe-ingredient\" style=\"list-style-type: disc;\"><span class=\"wprm-recipe-ingredient-amount\">1 1\/2<\/span>&#32;<span class=\"wprm-recipe-ingredient-unit\">tazas<\/span>&#32;<span class=\"wprm-recipe-ingredient-name\">de queso que se derrita<\/span>&#32;<span class=\"wprm-recipe-ingredient-notes wprm-recipe-ingredient-notes-faded\">como asadero, quesadilla, Oaxaca, Monterey Jack, o mozzarella<\/span><\/li><\/ul><\/div><\/div>\n    <\/div>\n    <div class=\"single-recipe__body__right\">\n      <div class=\"wprm-recipe-instructions-container wprm-recipe-12099-instructions-container wprm-block-text-normal\" data-recipe=\"12099\"><h3 class=\"wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Para preparar<\/h3><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para hacer la masa fresca de ma\u00edz:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-12099-step-0-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">En una procesadora o licuadora, muele los granos de elote y la leche evaporada. La mezcla debe quedar un poco grumosa, no completamente molida y lisa.<\/span><\/div><\/li><li id=\"wprm-recipe-12099-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En el taz\u00f3n de la batidora con aditamento de pala, mezcla la mantequilla y el az\u00facar, y bate a velocidad media unos 2 minutos, hasta que est\u00e9 suave y cremosa. Raspa el taz\u00f3n y la pala para sacar toda la mezcla.<\/div><\/li><li id=\"wprm-recipe-12099-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En un recipiente mediano, mezcla la masa harina, el bicarbonato de sodio y 1\/2 cucharadita de sal.<\/div><\/li><li id=\"wprm-recipe-12099-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Reduce la velocidad de la batidora a baja y agrega alternando la mezcla del ma\u00edz molido con la mezcla de la masa harina. Cuando todo est\u00e9 incorporado, agrega 1 cucharadita de aceite vegetal, aumenta la velocidad a media y sigue batiendo de 7 a 8 minutos m\u00e1s hasta que la masa se amalgame completamente y est\u00e9 cremosa y esponjada.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para hacer el relleno:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-12099-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Calienta 1 cucharada de aceite vegetal en un sart\u00e9n a fuego medio. Agrega la cebolla y cocina, revolviendo con frecuencia, de 3 a 4 minutos hasta que se empiece a suavizar. Agrega los chiles Anaheim rostizados, espolvorea 1\/2 cucharadita de sal y cocina de 3 a 4 minutos m\u00e1s, revolviendo seguido, hasta que las cebollas est\u00e9n muy suaves y todos los sabores se hayan incorporado. Retira del fuego y pasa, raspando el taz\u00f3n, a un recipiente.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para armar los tamales:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-12099-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Saca unas 30 hojas de ma\u00edz de buen tama\u00f1o del paquete y ponlas en un recipiente grande con agua caliente. Rem\u00f3jalas durante un par de minutos, o hasta que est\u00e9n flexibles, y esc\u00farrelas. Una por una, pon una hoja de ma\u00edz con la punta hacia ti. Si las hojas se ven delgadas, puedes usar dos, una encima de la otra. Deja un espacio de unos 3 a 4 cm en la parte de abajo, un espacio m\u00ednimo de 1 cm a los lados y un poco m\u00e1s que eso arriba, extiende \u00bc de taza de masa en un rect\u00e1ngulo de aproximadamente 5&#215;8-cm. La capa de masa tendr\u00e1 un espesor de un poco m\u00e1s de 1\/2 cm. Pon una cucharada muy generosa del relleno de chile Anaheim y cebolla junto con una muy generosa cucharada del queso rallado en medio y a lo largo de la masa.<\/span><\/div><\/li><li id=\"wprm-recipe-12099-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Levanta los dos lados largos de la hoja de ma\u00edz y ac\u00e9rcalos para juntarlos (ver\u00e1s c\u00f3mo la masa rodea el relleno) y dobla las orillas juntas hacia un lado, enroll\u00e1ndolos alrededor del tamal. Dobla hacia arriba la parte de abajo que acaba en pico. Esto va a crear un fondo cerrado y lo de arriba se quedar\u00e1 abierto. Si el tamal no se sostiene, puedes cortar tiras de las hojas de ma\u00edz que no uses y amarrarlas alrededor de la parte de abajo. Presiona ligeramente de abajo hacia arriba para emparejar el relleno, sin apretar muy fuerte.<\/div><\/li><li id=\"wprm-recipe-12099-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Si no los vas a meter a la vaporera de inmediato, ponlos en un plato o charola, c\u00fabrelos con papel pl\u00e1stico y refrigera. Los puedes armar un d\u00eda antes de cocinarlos. Tambi\u00e9n los puedes cocinar con anticipaci\u00f3n y recalentarlos (ver abajo).<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para preparar la tamalera o vaporera:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-12099-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Vierte agua en del fondo de la tamalera, para que haya agua debajo de la canasta o rejilla de la tamalera, y calienta hasta que hierva. Si quieres tener la seguridad de que el agua no se ha evaporado durante todo el tiempo de cocci\u00f3n, mete una moneda para que las pueda o\u00edr si se evapora toda el agua. Forra la tamalera con una o dos capas de las hojas de ma\u00edz remojadas.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-normal\">Para cocinar los tamales:<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-12099-step-4-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\"><span style=\"display: block;\">Cuando tengas los tamales listos, ponlos lo m\u00e1s parados que puedas en la tamalera preparada, con el lado abierto hacia arriba. Si queda espacio adentro, mete m\u00e1s hojas de ma\u00edz para que los tamales no se muevan. Cubre los tamales con m\u00e1s hojas de ma\u00edz, cierra bien con la tapa y cocina al vapor por 1 1\/2 horas. Deja reposar los tamales listos de 10 a 15 minutos. Sabr\u00e1s que los tamales est\u00e1n listos cuando se separan f\u00e1cilmente de las hojas. Estar\u00e1n h\u00famedos y despegados de las hojas. Ver\u00e1s humedad, como cuando separas un muy buen muffin de su molde de papel.<\/span><\/div><\/li><li id=\"wprm-recipe-12099-step-4-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Los tamales se mantendr\u00e1n tibios en la tamalera durante unas 2 horas. Se pueden hacer desde antes y guardarse por varios d\u00edas en el refrigerador bien envueltos. Tambi\u00e9n se pueden congelar por meses. En cualquier caso, recalienta los tamales en la tamalera.
