Secamos nuestros jalape\u00f1os y salen muy bien, y este ser\u00eda el siguiente paso en mi proceso de preparaci\u00f3n \u00a1Por favor ap\u00farate y prep\u00e1ralos para nosotros!\u201d<\/em><\/p>\n<p>Australia&#8230;qu\u00e9 lugar tan ex\u00f3tico desde donde alguien se preocupa c\u00f3mo hacer este vers\u00e1til chile en escabeche. Aunque los chipotles en adobo son tan usados en la cocina mexicana, la mayor\u00eda de los mexicanos los compran en tiendas, ya enlatados y algunos de extraordinaria calidad.<\/p>\n<p>Piensa en la mostaza, \u00bfla compras o preparas la tuya?<\/p>\n<p>Aunque el tiempo me ha demostrado que hay m\u00e1s personas interesadas en preparar las cosas en su casa que lo que pensaba. El post m\u00e1s visitado en mi sitio, por mucho, es en el que explico c\u00f3mo preparar chiles jalape\u00f1os en escabeche. Es otro chile que disfrutan los mexicanos todo el d\u00eda, de sur a norte, y usualmente lo compran en lata.<\/p>\n<p>Bueno, Cath, me ha tomado tiempo. Te pido disculpas. No es porque no haya tomado en cuenta tu petici\u00f3n. Todos los chipotles son jalape\u00f1os que se han madurado, secado y ahumado. Todos son picantes, de sabor intenso y ahumados. Pero como hay diferentes tipos de jalape\u00f1os, resultan en diferentes tipos de chipotles.<\/p>\n<p>Los jalape\u00f1os m\u00e1s peque\u00f1os, con un sabor y aroma m\u00e1s intensos, se vuelven chipotles morita, como en la foto de arriba. Tienen un color oscuro y un sabor m\u00e1s intenso y son los que prefiero. Los productores comerciales tambi\u00e9n, probablemente por su sabor y color atractivo, y tambi\u00e9n porque son m\u00e1s peque\u00f1os y funcionan bien en las latas m\u00e1s peque\u00f1as que se venden en las tiendas.<\/p>\n<p>Tambi\u00e9n puedes usar chipotles mecos, que est\u00e1n en la foto de abajo. Pero no lo es.<\/p>\n<p>Los chipotles se deben enjuagar y hervir en agua durante 15 minutos. Pero es justo el adobo que hace los chiles que venden en el supermercado lo que los hacen tan ricos.<\/p>\n<p>Para prepararlos, aparte de los ingredientes usuales de un escabeche, como vinagre, aceite y especias, despu\u00e9s de mucho probar, encontr\u00e9 que necesitas a\u00f1adir chiles anchos. Algunas personas a\u00f1aden jitomates, y otras no. Yo s\u00ed lo hago. Los chipotles son picosos, ahumados y sustanciosos. Los chiles anchos son semi-amargos, suaves y tienen un sabor a ciruela pasa. Cocina todo junto por 10 minutos. No solo es porque lo que venden es tan rico. O porque la percepci\u00f3n de que es muy dif\u00edcil hacerlos persiste. Yo creo que es porque son tan ricos, y comen tantos, que tendr\u00edan que preparar chipotles continuamente para satisfacer su propia demanda.<\/p>\n<p>Se comen con todo: tortas, s\u00e1ndwiches, quesadillas, tostadas&#8230;tambi\u00e9n se usan para sazonar y darle sabor a sopas, guisos, tamales, frijoles, aderezos y mucho, mucho m\u00e1s.<\/p>\n<p>Aqu\u00ed tienes, Cath Kelly, ojal\u00e1 esta receta te complazca. decimal;\"><div class=\"wprm-recipe-instruction-text\">Enjuaga los chipotles y esc\u00farrelos. Ponlos en una olla mediana y cubre con agua. Calienta a fuego medio. Una vez que empiecen a hervir, cocina durante 15 minutos. Apaga el fuego.<\/div><\/li><li id=\"wprm-recipe-9601-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Pon los chiles anchos y los jitomates en una olla y cubre con agua. Hierve de 6 a 8 minutos, hasta que los jitomates est\u00e9n cocidos y suaves. Pasa a una licuadora con 1 taza del l\u00edquido de cocci\u00f3n y lic\u00faa hasta obtener un pur\u00e9 terso.<\/div><\/li><li id=\"wprm-recipe-9601-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En un sart\u00e9n grande, calienta el aceite a fuego medio-alto de 1  2 minutos, hasta que est\u00e9 caliente, sin que llegue a humear. Agrega las zanahorias y las cebollas, y deja que se sazonen durante un par de minutos. Has lugar para a\u00f1adir el ajo, y cocina durante 1 minuto m\u00e1s. Vierte el pur\u00e9 de chiles anchos y jitomates, la mejorana, el tomillo, las hojas de laurel, la sal y el az\u00facar. Revuelve y deja que la salsa se sazone y espese de 5 a 6 minutos.<\/div><\/li><li id=\"wprm-recipe-9601-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Vierte los vinagres, y cocina durante 5 minutos m\u00e1s. Finalmente, escurre los chipotles y a\u00f1\u00e1delos a la mezcla (tira el l\u00edquido donde se cocieron). Deja que todo se cocine por 5 minutos m\u00e1s y apaga el fuego. Deja que se enfr\u00eden y luego ponlos en frascos.<\/div><\/li><li id=\"wprm-recipe-9601-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cierra muy bien las tapas de los frascos y refrigera.
