Primero en una sopa, luego en tamales, luego en un caldo y finalmente en un omelet delicioso. Despu\u00e9s de recorrer el estado, me sorprendi\u00f3 ver que crece en arbustos altos en los jardines y patios de muchos hogares. Regres\u00e9 a Washington deseando tener un arbusto de chipil\u00edn tambi\u00e9n. Su sabor me encanta; sabe a una mezcla entre berros y espinacas, pero m\u00e1s suave. Su textura es tierna pero sustanciosa.<\/p>\n<p>Chipil\u00edn es una hierba que se usa y encuentra sobre todo en el sureste mexicano, en los Estados de Chiapas, Tabasco y Oaxaca, y en algunas partes de Centroam\u00e9rica. Crece en arbustos que pueden crecer muy alto, con tallos delgados. Las hojas son verdes, delgadas y peque\u00f1as. Se puede cocinar al vapor, hervir, mezclar con masa para hacer tamales o tortillas, o secarlos para sazonar.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7268\" src=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2012\/02\/Chipilin-1-1024x687.jpg\" alt=\"Chipilin 1\" width=\"912\" height=\"612\" srcset=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2012\/02\/Chipilin-1-1024x687.jpg 1024w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2012\/02\/Chipilin-1-300x201.jpg 300w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2012\/02\/Chipilin-1-768x516.jpg 768w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2012\/02\/Chipilin-1-150x101.jpg 150w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2012\/02\/Chipilin-1-600x403.jpg 600w\" sizes=\"(max-width: 912px) 100vw, 912px\" \/><\/p>\n<p>No he podido encontrar chipil\u00edn f\u00e1cilmente en supermercados grandes de Estados Unidos. Sin embargo, se vende en mercados locales. Como ya existe demanda para consumir chipil\u00edn, la Universidad de Massachusetts ha estado investigando durante los \u00faltimos a\u00f1os c\u00f3mo comercializar las semillas.
