Despu\u00e9s de ver c\u00f3mo lo disfrutaron los invitados, se los quiero compartir a ustedes.<\/p>\n<p>La palabra mole viene del N\u00e1huatl mulli, una salsa o pasta espesa hecha con ingredientes molidos juntos en un molcajete o molino comunal. Hoy en d\u00eda, podemos una procesadora y el mole se diluye con caldo o agua cuando se vaya a usar.<\/p>\n<p>El mole poblano, con su larga lista de ingredientes y proceso laborioso, no es la mejor manera de presentar a los moles. Hay moles m\u00e1s simples con no m\u00e1s de 4 o 5 ingredientes, f\u00e1ciles de preparar y deliciosos, pero me encanta el mole poblano y s\u00e9 que a ustedes tambi\u00e9n les va a fascinar.<\/p>\n<p>Hice muchas pruebas para encontrar la manera m\u00e1s f\u00e1cil de hacerlo sin modificar su autenticidad y sabor. Si re\u00fanes todos los ingredientes y los tienes en listos antes de comenzar el proceso, lo que los franceses llaman Mise en Place y los mexicanos Estate Liso, es un proceso manejable que toma como una hora, as\u00ed que comenzamos.<\/p>\n<p>Conforme enumero los ingredientes, voy a explicar algunos conceptos b\u00e1sicos del mole.<\/p>\n<p>Tradicionalmente, se usan cuatro tipos de chile: el ancho rojizo (a las 6), con sabor semi amargo y afrutado, el mulato negro (a las 12) con un sabor mucho m\u00e1s completo, dulce y chocolatoso, el pasilla color pasa (a las 3), con un sabor profundo, fuerte y amargo, y el chipotle (a las 9), ahumado, fuerte y picante.<img class=\"aligncenter size-full wp-image-10438\" src=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-1.jpg\" alt=\"Mole Poblano 1\" width=\"912\" srcset=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-1.jpg 479w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-1-300x193.jpg 300w\" sizes=\"(max-width: 479px) 100vw, 479px\" \/>Hay que agregarle chiles para que sea un mole, pero no jalape\u00f1os. Tres siglos como colonia espa\u00f1ola influyeron bastante en nuestra comida. Tal es el caso de la cebolla, el ajo y muchas de las nueces, frutas y especias que menciono a continuaci\u00f3n.<\/p>\n<p>Los cacahuates y pepitas nativas que se usan como espesantes y para darle sabor a muchos platillos mexicanos, y luego almendras mediterr\u00e1neas y pasas dulces.<br \/>\n<img class=\"aligncenter size-large wp-image-10440\" src=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-3-1024x687.jpg\" alt=\"Mole Poblano 3\" width=\"912\" srcset=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-3-1024x687.jpg 1024w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-3-300x201.jpg 300w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-3-768x516.jpg 768w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/>Las semillas de los chiles no se usan en muchos casos, pero s\u00ed se aprovechan en este mole barroco, creado en el Siglo XVII. Podr\u00e1s ver que otra cualidad del mole es que los ingredientes se transforman, y sus cualidades se amplifican, antes de que se lic\u00faen juntos. Esto permite crear varias capas de sabores complejos.<\/p>\n<p>Primero, pon la manteca, manteca vegetal o aceite en la olla. Una vez que est\u00e9 caliente, dora los chiles hasta que est\u00e9n crujientes y tostados. Saca los chiles con una cuchara con ranuras o ara\u00f1a y ponlas en un recipiente. Pero puedes usar la misma olla para todo siempre que sea gruesa, grande y extendida, y que le des tiempo suficiente entre los ingredientes antes a\u00f1adir el siguiente.<\/p>\n<p>As\u00ed que haz lugar en la olla otra vez, y agrega las semillas de chile que guardaste.<br \/>\n<img class=\"aligncenter size-large wp-image-10447\" src=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-10-1024x687.jpg\" alt=\"Mole Poblano 10\" width=\"912\" srcset=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-10-1024x687.jpg 1024w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-10-300x201.jpg 300w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2010\/03\/Mole-Poblano-10-768x516.jpg 768w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/>El ajonjol\u00ed, los clavos sin tallo, las semillas de an\u00eds, las semillas de cilantro, la pimienta negra, la canela, la pimienta gorda molida, el tomillo y la mejorana. Luego, lic\u00faa o procesa todo hasta obtener una salsa espesa. Si prefieres, puedes usar el molcajete.<\/p>\n<p>Finalmente, dale gracias a Sor Andrea por lo que est\u00e1s a punto de ver. enchiladas, enmoladas, empanadas, huevos, nopales, o papas, aparte de la versi\u00f3n tradicional: encima de pollo o pavo hervido y espolvorear al final semillas de ajonjol\u00ed ligeramente Retira los chiles con una cuchara con ranuras y ponlos en un recipiente seg\u00fan van saliendo.<\/div><\/li><li id=\"wprm-recipe-9673-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En el mismo aceite, acitrona la cebolla y el ajo y de 2 a 3 minutos hasta que suelten el aroma. Agrega las almendras, los cacahuates, las pasas y las pepitas, y coc\u00ednalos de 2 a 3 minutos.<\/div><\/li><li id=\"wprm-recipe-9673-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Agrega el ajonjol\u00ed, los clavos sin tallo, las semillas de an\u00eds, las semillas de cilantro, la pimienta negra, la canela, la pimienta gorda molida, el tomillo y la mejorana. Revuelve frecuentemente, y cocina todo de 3 a 4 minutos m\u00e1s. Haz lugar en la olla, y a\u00f1ade los pedazos de tortilla y pan junto con los tomates verdes y los jitomates. Cocina todo por un par de minutos.<\/div><\/li><li id=\"wprm-recipe-9673-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Agrega los chiles asados y vierte el caldo de pollo. Revuelve una vez y cuando empiece a hervir, agrega los pedazos de chocolates y la sal. Revuelve bien y hierve de 12 a 15 minutos m\u00e1s. Apaga el fuego, tapa y deja reposar la mezcla por 1\/2 hora, para que los chiles se puedan suavizar.<\/div><\/li><li id=\"wprm-recipe-9673-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En partes, pon los ingredientes en la licuadora o procesadora y procesa hasta obtener una salsa tersa. Puedes guardar el mole, tapado, hasta por un mes o congelarlo hasta por un a\u00f1o.<\/div><\/li><li id=\"wprm-recipe-9673-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cuando lo vayas a servir, diluye una taza de mole con 1\/2 taza de caldo de pollo en una olla y hierve durante 2 o 3 minutos.
