{"id":3471,"date":"2016-05-02T22:50:57","date_gmt":"2016-05-02T22:50:57","guid":{"rendered":"https:\/\/patijinich.com\/pati_2020\/es\/?post_type=recipe&#038;p=3471"},"modified":"2021-03-18T16:11:29","modified_gmt":"2021-03-18T16:11:29","slug":"ceviche-que-te-mueres-2","status":"publish","type":"post","link":"https:\/\/patijinich.com\/pati_2020\/es\/ceviche-que-te-mueres-2\/","title":{"rendered":"Ceviche que te mueres"},"content":{"rendered":"<p>Mi profesi\u00f3n actual comenz\u00f3 por un ceviche.<\/p>\n<p>Despu\u00e9s de muchos a\u00f1os en la academia, con dos t\u00edtulos universitarios y muchos art\u00edculos de investigaci\u00f3n publicados, renunci\u00e9 de un despacho prestigioso para comenzar un futuro incierto.<\/p>\n<p>Me hab\u00eda sentido frustrada profesionalmente hac\u00eda m\u00e1s de un a\u00f1o y segu\u00ed involucr\u00e1ndome en m\u00e1s proyectos en la oficina con la esperanza de olvidarme con m\u00e1s trabajo.<\/p>\n<p>Lo que finalmente provoc\u00f3 mi cambio profesional fue lo siguiente: se me hab\u00eda pedido hacer una investigaci\u00f3n para comparar las transiciones democr\u00e1ticas de M\u00e9xico y Per\u00fa, pero no pod\u00eda engancharme realmente en el trabajo. En vez de investigar los procesos pol\u00edticos y las t\u00e1cticas de resoluci\u00f3n de conflictos, me sent\u00ed atra\u00edda a investigar las diferencias entre los ceviches mexicanos y los peruanos.<\/p>\n<p>Ambos pa\u00edses presumen de tener los mejores ceviches y ambos insisten en haberlos invitados. Me preguntaba sobre los verdaderos or\u00edgenes del ceviche en ambas partes. Se ha registrado que los pueblos de ambos pa\u00edses han comido pescado fresco desde la \u00e9poca prehisp\u00e1nica.<\/p>\n<p>Pero, \u00bfqui\u00e9n empez\u00f3 a usar c\u00edtricos primero? \u00bfC\u00f3mo empezaron a usar los c\u00edtricos si no son nativos a ninguno de los dos pa\u00edses? \u00bfY qu\u00e9 hay de los chiles? \u00bfPor qu\u00e9 se escribe \u201cceviche\u201d en un pa\u00eds y \u201ccebiche\u201d en otro y cu\u00e1l es el origen y significado de la palabra? \u00bfPor qu\u00e9 los mexicanos marinan el pescado primero, mientras los peruanos sirven el pescado con lim\u00f3n de inmediato?<\/p>\n<p>Todo lo que quer\u00eda era investigar y escribir sobre y cocinar cocina mexicana &#8211; la comida que tanto extra\u00f1aba. Me di cuenta de que era hora de seguir mi pasi\u00f3n de forma m\u00e1s seria.<\/p>\n<p>Mi pap\u00e1 no entend\u00eda este cambio de rumbo. \u201cPati, despu\u00e9s de tantos a\u00f1os de estudio, \u00bfte vas a meter a la cocina a enjuagar sartenes y ollas?\u201d<br \/>\nAhora lo \u201cmolesto\u201d y le digo que tambi\u00e9n fue \u201cpara preparar los mejores ceviches.\u201d<\/p>\n<p>He preparado muchos ceviches durante los m\u00e1s de diez a\u00f1os desde que cambi\u00e9 carrera. Me han gustado todos.<\/p>\n<p>Pero \u00e9ste es realmente especial.
