Las tortillas de ma\u00edz se calientan o se fr\u00eden ligeramente y luego se doblan o enrollan con un sin fin de rellenos, o solas, siempre ba\u00f1adas en alg\u00fan tipo de salsa y acompa\u00f1adas desde el queso fresco desmoronado y un poco de crema, hasta cebolla cruda o encurtida, chiles u otras verduras, aguacate mexicano, chorizo, lechuga o col ralladas, entre muchos otros.<\/p>\n<p>Tomando en cuenta la variedad de rellenos, salsas y acompa\u00f1amientos, las enchiladas no solo representan la identidad gastron\u00f3mica de cada regi\u00f3n, sino tambi\u00e9n los caprichos y antojos de quienes las preparan. Como decimos en M\u00e9xico, pas\u00e9 las tortillas por aceite caliente; es decir, met\u00ed las tortillas en aceite muy caliente por unos segundos para hacerlas maleables y resistentes para que aguanten la salsa y los dem\u00e1s ingredientes. Si el aceite est\u00e1 muy caliente, la tortilla no lo absorbe, pero s\u00ed se transforma. No es obligatorio fre\u00edrlas, tambi\u00e9n puedes calentar las tortas en un comal, sart\u00e9n o parrilla caliente durante 1 minuto por lado, hasta que est\u00e9n muy calientes y apenas se empiecen a tostar.<\/p>\n<p>Lo \u00fanico que les voy a pedir, de todo coraz\u00f3n, es que no usen tortillas de harina para preparar enchiladas. Por favor no lo hagan. Se los pido.<\/p>\n<p>Las tortillas de harina son m\u00e1s dulces que las de ma\u00edz, y resisten menos a las salsas, rellenos y acompa\u00f1antes. Siempre me cuesta decidir si le pongo jalape\u00f1os o chipotles en adobo a los frijoles negros, as\u00ed que aqu\u00ed le pongo de los dos chiles. Los frijoles negros preparados en casa, o comprados si no tienes tiempo de hacerlos, son sazonados con la salsa ahumada, dulce y picante de los chipotles en adobo, as\u00ed como con el jugo avinagrado de los jalape\u00f1os en escabeche. Me encanta el resultado final.<\/p>\n<p>Olv\u00eddate de acompa\u00f1arlo con algo ligero. En lugar de eso, ponles bastante chorizo mexicano dorado a las enchiladas.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-6130\" gustaron tanto, que no pod\u00eda decidir con cu\u00e1l foto terminar este post, as\u00ed que les muestro c\u00f3mo se ven de arriba y de lado.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter un antojito, sino uno antojote, especialmente m\u00edo. Las prepar\u00e9 para comerlas durante un gran brunch, y pasaron la prueba con mis hijos, que se peleaban hasta el \u00faltimo pedazo.<\/p>\n<p>Espero que la preparen para festejar el Cinco de Mayo, el D\u00eda de la Madre o del Padre, o cuando quieran consentirse. Aunque suena complicado prepararlas, es muy f\u00e1cil y r\u00e1pido prepararlas. Una vez que est\u00e9 caliente, a\u00f1ade el chorizo y desmen\u00fazalo con una cuchara de madera o esp\u00e1tula mientras se dora, de 5 a 6 minutos.<\/div><\/li><li id=\"wprm-recipe-9472-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">P\u00e1salo a un recipiente, t\u00e1palo y reserva.<\/div><\/li><li id=\"wprm-recipe-9472-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Precalienta un comal o sart\u00e9n a fuego medio para calentar las tortillas m\u00e1s adelante.<\/div><\/li><li id=\"wprm-recipe-9472-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Mientras, calienta el aceite en un sart\u00e9n mediano, a fuego medio alto, sin que llegue a humear. A\u00f1ade las cebollas y acitr\u00f3nalas hasta que se empiecen a dorar las orillas, durante unos 3 minutos. Reduce el fuego a medio-bajo y agrega los huevos batidos, espolvorea la sal y cocina, revolviendo frecuentemente y con cuidado, hasta el t\u00e9rmino que te guste. A mi gusta cocinar los huevos hasta que est\u00e1n suaves y tiernos, no secos, de 4 a 5 minutos. Retira del fuego.<\/div><\/li><li id=\"wprm-recipe-9472-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Calienta las tortillas, un par a la vez, en el comal o sart\u00e9n que precalentaste, de 30 segundos a 1 minuto por lado. Las tortillas deben estar calientes, hasta un poco tostadas. Tambi\u00e9n puedes pasar las tortillas por aceite caliente, es decir, fre\u00edrlas r\u00e1pidamente en aceite ya caliente en un sart\u00e9n mediano a fuego medio (10 segundos por lado). Pon las tortillas calientes en un plato una por una y agrega unas 3 cucharadas de huevos revueltos en cada una. Enrolla las tortillas y p\u00e1salas a un plat\u00f3n con la apertura hacia abajo. Haz lo mismo con el resto de las tortillas.<\/div><\/li><li id=\"wprm-recipe-9472-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cuando est\u00e9n todas las tortillas enrolladas en el plat\u00f3n, vierte la salsa de frijoles encima. Espolvorea el chorizo, el queso y las cebollas adicionales.
