S\u00ed se pueden preparar crepas en sartenes de acero; sin embargo, es muy dif\u00edcil calcular el nivel y la distribuci\u00f3n correctos de calor, y se requiere engrasar el sart\u00e9n mucho m\u00e1s que si utilizas uno antiadherente, ya que la masa para crepas es muy delgada y delicada.<\/p>\n<p>La foto de arriba es de mis sartenes habituales. El de en medio es un sart\u00e9n de 25 cm de di\u00e1metro para crepas y tiene los lados m\u00e1s cortos. Los otros dos son sartenes normales antiadherentes m\u00e1s peque\u00f1os.<\/p>\n<p>Tambi\u00e9n es indispensable tener una receta confiable, y aqu\u00ed la tienen: <a href=\"\/es\/recipe\/crepas-receta-basica\/\">la receta b\u00e1sica para crepas<\/a>.<\/p>\n<p>Otro punto importante es que entre m\u00e1s chicas sean las crepas, m\u00e1s f\u00e1cil ser\u00e1 extenderlas en el sart\u00e9n y voltearlas. Ya que los lados del sart\u00e9n act\u00faan como una barrera natural para la masa delgada, mientras inclinas el sart\u00e9n y extiendes la masa, ser\u00e1 m\u00e1s f\u00e1cil hacerlas del tama\u00f1o del sart\u00e9n y que queden bien redondas.<\/p>\n<p>Algunos sartenes para crepas vienen con un aditamento llamado <em>rateau<\/em>, para extender la masa uniformemente, pero funciona igual de bien verter la masa en un lado del sart\u00e9n e inclinarlo r\u00e1pidamente para extenderla y cubrir todo el fondo.<\/p>\n<p>Entre m\u00e1s grande sea el sart\u00e9n, y por lo tanto las crepas, ser\u00e1 m\u00e1s dif\u00edcil voltearlas al cocinarlas. Por eso seguramente han visto c\u00f3mo en las creper\u00edas voltean las crepas con palos de madera, donde preparan unas gigantes en parrillas el\u00e9ctricas o especiales para crepas. Las creperas doblan la crepa cocida de un lado en el palo de madera para poder voltearlas del otro lado.<\/p>\n<p>Puedes comprar una crepera el\u00e9ctrica para usar en casa similar a las de las creper\u00edas. Pero si tienen un sart\u00e9n de 20-25 cm, no necesitas un aparato especial.
