Es una variedad de hongo, similar a algunos champi\u00f1ones, que crece en el ma\u00edz fresco. En M\u00e9xico, crece durante la \u00e9poca de lluvias que empieza en abril (o marzo, seg\u00fan algunos), y acaba en septiembre (o en octubre).<\/p>\n<p>No es un hongo bonito; crece de forma desordenada en las mazorcas, creando granos enormes que son negros por dentro y por fuera tienen una especie de piel aterciopelada, entre blanca y gris.<\/p>\n<p>Su sabor es intenso e inigualable: sabe a hongo, a tierra, a madera, con un poco de tinta que me recuerda a la tinta de los calamares.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7064\" src=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/05\/Huitlacoche-1-1024x687.jpg\" alt=\"Huitlacoche 1\" width=\"912\" height=\"612\" srcset=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/05\/Huitlacoche-1-1024x687.jpg 1024w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/05\/Huitlacoche-1-300x201.jpg 300w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/05\/Huitlacoche-1-768x516.jpg 768w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/05\/Huitlacoche-1-150x101.jpg 150w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/05\/Huitlacoche-1-600x403.jpg 600w\" sizes=\"(max-width: 912px) 100vw, 912px\" \/><\/p>\n<p>En M\u00e9xico, ya era un manjar antes de que llegaran los espa\u00f1oles. Ya que el ma\u00edz era sagrado, cualquier cosa que creciera en \u00e9l, y que supiera tan rico, ten\u00eda que ser considerada como un regalo de los dioses. Puedes encontrarlo por todo el pa\u00eds en los mercados, aunque que cuesta m\u00e1s que el elote normal.<\/p>\n<p>No es f\u00e1cil encontrarlo fresco en Estados Unidos, ya que para los agricultores es una plaga, aunque algunos restaurantes y chefs lo est\u00e1n usando cada vez m\u00e1s. La Fundaci\u00f3n James Beard hasta organiz\u00f3 una cena con el tema de huitlacoche (o trufa mexicana) en 1989 para familiarizar a los norteamericanos con esta delicia.<\/p>\n<p>Si no lo puedes encontrar fresco, seguramente lo puedes encontrar enlatado o descongelado. An\u00edmate.<\/p>\n<p>Lo puedes usar de muchas maneras: en sopas, como relleno de tacos y quesadillas, con arroz y para rellenar crepas, pollo y pescado, entre otros platillos.
