Se conoce tambi\u00e9n como camote o nabo mexicano, y es un tub\u00e9rculo. Pero son m\u00e1s que eso en cuanto a sabor, textura y usos en la cocina.<\/p>\n<p>Hasta donde s\u00e9, lo com\u00fan es comerlas crudas. No hay que cocinarlas ya que se perder\u00edan las cualidades que m\u00e1s nos gustan. Se parecen en sabor y textura a las casta\u00f1as de agua, pero para m\u00ed las j\u00edcamas son m\u00e1s refrescantes, crocantes y dulces.<\/p>\n<p>Hay de varios tama\u00f1os, lo que no afecta su sabor. En M\u00e9xico hay j\u00edcamas baby muy lindas, pero no las he encontrado aqu\u00ed. Una vez que les quitas la c\u00e1scara dura, parecen un coco. La c\u00e1scara es muy fibrosa y debes quit\u00e1rsela antes de comerla. Hay que pelar bien la j\u00edcama para que no quede una capa blanca delgada y fibrosa que no se come. Por dentro, son blancas y h\u00famedas.<br \/>\nSon una botana muy popular en M\u00e9xico, una muy sana porque no tienen grasa, tienen mucha prote\u00edna y son sustanciosas y f\u00e1ciles de digerir. Se pueden comer solas o combinarlas con otras verduras o frutas, con jugo de lim\u00f3n fresco, sal y chile en polvo como el piqu\u00edn o salsa de chile como Buffalo o Valentina, entre otros. Tambi\u00e9n se usan mucho en ensaladas.<\/p>\n<p>Las \u00faltimas veces que he ido a M\u00e9xico, he visto que se usan en versiones vegetarianas de tacos y enchiladas, en las que una rebanada grande y delgada de j\u00edcama sustituye a la tortilla.<\/p>\n<p>Cuando vayas a comprar j\u00edcamas, busca las que est\u00e9n duras con la c\u00e1scara seca. En casa, refrig\u00e9ralas hasta que las vayas a usar. Pero no tardes mucho en usarlas porque se ponen aguadas y ya no saben bien. Si despu\u00e9s de pelarlas la pulpa ya no es blanca sino de color caf\u00e9 claro, ya estar\u00e1n pasadas.
