Algunos de los platillos que han llegado de M\u00e9xico y que son populares en los Estados Unidos, han sido reinterpretados y promovidos por la industria de comida r\u00e1pida de este pa\u00eds. En serio, va a ser muy dif\u00edcil encontrar en M\u00e9xico burritos gigantescos, nachos nadando en queso y fajitas cubiertas de crema agr\u00eda.<\/p>\n<p>Una de las cosas que m\u00e1s sorprende a los que indagan un poco sobre nuestra comida, es lo mucho que nos gustan las ensaladas.<\/p>\n<p>No, la \u201ctaco salad\u201d no. Me refiero a ensaladas saludables llenas de verduras, frijoles, granos, flores comestibles y todo tipo de chiles secos y hierbas.<\/p>\n<p>Es posible que el uso que le damos en M\u00e9xico a la palabra ensalada no ayude mucho, ya que la usamos s\u00f3lo para nombrar algo que tiene lechuga u hojas verdes. Esta costumbre deja fuera al chayote en vinagre, a las calabacitas en escabeche, a los nopalitos y a much\u00edsimas ensaladas m\u00e1s que com\u00fanmente nombramos por el ingrediente principal.<\/p>\n<p>Las ensaladas mexicanas son tan fascinantes, que les dediqu\u00e9 un cap\u00edtulo entero en mi libro de cocina. Usualmente son f\u00e1ciles de preparar y siempre tienen algo de ex\u00f3tico o interesante, como una vinagreta de Jamaica, j\u00edcama crujiente, chiles ancho encurtidos, nueces o cacahuates caramelizados, pepitas picantes o semillas de girasol tostadas, entre muchas otras opciones.<\/p>\n<p>Las ensaladas se aderezan com\u00fanmente con aceite y vinagre, y los chefs mexicanos son muy creativos con estos ingredientes.<\/p>\n<p>Preparamos vinagretas r\u00e1pidamente, ya sea en la licuadora o agitando los ingredientes en un frasco tapado. Ya preparadas, se pueden refrigerar y volver a usar, agitando el frasco para emulsificarlas otra vez. Escoge otro ingrediente como cebollines, estrag\u00f3n, menta, perejil o una mezcla de varios.<\/p>\n<p>Vamos a usar el cilantro para preparar una de mis vinagretas favoritas. Solo tienes que poner todos los ingredientes en la licuadora, y listo. Yo la he servido con elotes, palmitos, garbanzos y frijoles negros y nos encant\u00f3. Hay tantas texturas, sabores y colores para combinar, que es una actividad casi l\u00fadica.<\/p>\n<p>Esta ensalada puede ser el plato fuerte si la sirves con pan r\u00fastico. Queda muy bien tambi\u00e9n con carnes asadas y picnics durante el verano.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-6464\"
