Pepe ten\u00eda raz\u00f3n, es deliciosa, y ni modo, as\u00ed se llama.<\/p>\n<p>Conoc\u00ed a Pepe hace unos meses durante una entrevista en Telemundo, en un viaje a Denver para promocionar mi libro. \u00c9l era el productor del programa. Mientras me acompa\u00f1aba a la salida, platicamos largo y tendido sobre la sopa, aunque yo ten\u00eda que apurarme para ir al aeropuerto. No s\u00e9 qu\u00e9 me llev\u00f3 a querer saber m\u00e1s sobre ella: su nombre tan curioso, lo mucho que le gusta a \u00e9l, o el hecho de que ido muchas veces a Chihuahua y nunca hab\u00eda o\u00eddo hablar de ella.<\/p>\n<p>Otra historia m\u00e1s, una de cientos y cientos de historias y recetas incre\u00edble que he conocido mientras he viajado por los Estados Unidos. Resulta que cada uno de los mexicanos que he conocido aqu\u00ed son tan apasionados, como yo, de la comida mexicana con la que crecimos. Somos un mont\u00f3n de fan\u00e1ticos nost\u00e1lgicos de la comida.<\/p>\n<p>El caldo de oso es muy popular en Chihuahua y no se encuentra en restaurantes porque solo se prepara en las casas. Tal vez por eso nunca la hab\u00eda visto en mis visitas a ese estado. Tomando en cuenta lo mucho que les gusta all\u00e1, el origen de su nombre se torna a\u00fan m\u00e1s curioso.<\/p>\n<p>Esta es la historia:<\/p>\n<p>Hace casi un siglo, los trabajadores que constru\u00edan la presa La Boquilla, en el R\u00edo Conchos en Camargo, preparaban todos los d\u00edas una sopa con bagre, muy com\u00fan en el r\u00edo. Ya que se com\u00edan la sopa tan seguido, en vez de decirle caldo de pescado, empezaron a llamarle caldo odioso.<\/p>\n<p>De decirlo tanto, se empezaron a referir a la sopa como caldo de oso, de odi-oso a oso. Esta es una costumbre muy mexicana, acortar las palabras o usar sus diminutivos, y as\u00ed fue como se le qued\u00f3 el nombre: Caldo de Oso.<\/p>\n<p>Pepe me dio algunos consejos, y me explic\u00f3 detalladamente c\u00f3mo la prepara su mam\u00e1. La investigu\u00e9 y prob\u00e9 en mi cocina. D\u00e9jenme decirles que el caldo de oso vale toda la nostalgia que Pepe lleva consigo por ella todos los d\u00edas. <div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-9385\" fuego medio. Una vez que se derrita la mantequilla y empiece a burbujear, a\u00f1ade la cebolla y acitrona de 4 a 5 minutos, hasta que las orillas se empiecen a dorar. A\u00f1ade el ajo y cocina durante otro minuto, hasta que suelte su aroma. Sube el fuego a medio-alto y agrega el tomate picado, cocina de 6 a 7 minutos hasta que se suavice. Espolvorea la harina encima de las verduras, revuelve y cocina durante otro minuto revolviendo frecuentemente hasta que la harina se empiece a dorar y huela a tostado. Vierte el caldo de pollo y deja hervir.<\/div><\/li><li id=\"wprm-recipe-9385-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Mientras, lic\u00faa los chiles y una taza de su l\u00edquido hasta obtener un pur\u00e9 suave. A\u00f1ade el pur\u00e9 de chiles, el tomillo, la mejorana, el or\u00e9gano, el comino, la hoja de laurel, la sal, la pimienta, el jalape\u00f1o y el vinagre a la sopa y revuelve bien. Cuando suelte el hervor, reduce el fuego a medio y cocina durante 15 minutos.<\/div><\/li><li id=\"wprm-recipe-9385-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">A\u00f1ade las zanahorias, las papas y el pescado y cocina durante 10 minutos m\u00e1s, hasta que las verduras y el pescado est\u00e9n cocidos.<\/div><\/li><li id=\"wprm-recipe-9385-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Sirve caliente con gajos de lim\u00f3n y cilantro picado.
