Ella dec\u00eda que \u00e9l no ten\u00eda l\u00edmites y que no se pod\u00eda medir cuando los com\u00eda.<\/p>\n<p>Pero mi abuelo conoc\u00eda bien a mi abuela, y sab\u00eda d\u00f3nde los escond\u00eda. Cuando los encontraba, se los guardaba en los bolsillos. No s\u00f3lo se guardaba jalape\u00f1os o serranos frescos, sino jalape\u00f1os encurtidos tambi\u00e9n. Ya me imagino lo que era lavar esos bolsillos.<\/p>\n<p>En realidad, a mi \u201cLali\u201d le encantaba darle gusto. Hab\u00eda aprendido a cocinar en Austria y preparaba platillos elegantes y deliciosos. Debes saber c\u00f3mo, cu\u00e1nto y lo m\u00e1s importante, cu\u00e1ndo a\u00f1adirlo, ya que no todos los platillos mexicanos usan chiles.<\/p>\n<p>Lali preparaba una base de hongos de manera tradicional mexicana. Cebolla, ajo y jalape\u00f1os (con semillas) picados y acitronados hasta que se doren las orillas. Luego a\u00f1ad\u00eda los hongos y los tapaba, para que se cocieran al vapor. Lo comparto por si te gustan as\u00ed, como a la mayor\u00eda de mi familia.<\/p>\n<p>Est\u00e1n a los que les gustan las bolas de matzo duras y los que las prefieren esponjosas. Los chefs discuten todo el tiempo sobre c\u00f3mo prepararlas ya sea duras o suaves: m\u00e1s o menos huevo, m\u00e1s o menos aceite o hacerlas con harina o mezcla para matzo.<\/p>\n<p>El truco de mi abuela era a\u00f1adirles agua mineral: una sola cucharada para toda la receta. Dec\u00eda que uno tiene que poder saborear todos los sabores de una receta, lo que en principio est\u00e1 bien, pero si mi abuelo estuviera aqu\u00ed, le har\u00eda la sopa con todos los
