El nombre viene de Tecamachalco, la zona donde est\u00e1 situado, y de la cadena de restaurantes a la que pertenece, <em>Anderson\u00b4s Carlos &amp; Charlies<\/em>. Ah\u00ed me reun\u00eda con mis amigos los viernes en la tarde para comer largo y tendido y darle la bienvenida al fin de semana.<\/p>\n<p>Antes de que la escuela empezara esos viernes, yo ya s\u00f3lo pod\u00eda pensar en una cosa: el excelente caldo de camar\u00f3n de <em>Tecamacharlie\u00b4s<\/em>: un caldo espeso de camarones deshidratados y sazonado con una salsa de chile guajillo.<\/p>\n<p>Se serv\u00eda como cortes\u00eda cuando por fin te daban mesa en ese lugar tan lleno y ruidoso. Los meseros lo tra\u00edan a la mesa todav\u00eda hirviendo, servido en caballitos de tequila y limones partidos listos para exprimirlos en el caldo. Si ten\u00edas suerte, te pod\u00eda tocar un camar\u00f3n o unos pedazos de papas y zanahorias en el fondo. No s\u00e9 qu\u00e9 tan bueno sea estos d\u00edas, adem\u00e1s la nostalgia a veces empa\u00f1a nuestros recuerdos.<\/p>\n<p>Sin embargo, uno puede encontrar caldo de camar\u00f3n, con sus variantes, en muchos restaurantes de la Ciudad de M\u00e9xico y es a\u00fan m\u00e1s popular en las costas del pa\u00eds.<\/p>\n<p>El \u00faltimo que prob\u00e9, y creo que a\u00fan mejor a pesar del poder de la nostalgia, es uno de los Restaurantes <em>Guadiana<\/em> a los que siempre voy cuando visito la ciudad.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7426\" src=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/01\/Caldo-de-Camaron-2-1024x687.jpg\" alt=\"Caldo de Camaron 2\" width=\"912\" height=\"612\" srcset=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/01\/Caldo-de-Camaron-2-1024x687.jpg 1024w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/01\/Caldo-de-Camaron-2-300x201.jpg 300w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/01\/Caldo-de-Camaron-2-768x516.jpg 768w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/01\/Caldo-de-Camaron-2-150x101.jpg 150w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2011\/01\/Caldo-de-Camaron-2-600x403.jpg 600w\" sizes=\"(max-width: 912px) 100vw, 912px\" \/><\/p>\n<p>Por m\u00e1s que he buscado, no hay caldo de camar\u00f3n en D.C., pero s\u00ed encuentro los pocos ingredientes necesarios para hacerlo. Lo que carecen en cantidad, lo compensan con personalidad, como el camar\u00f3n seco, que est\u00e1 en la foto de arriba. Hay que remojarlos de 5 a 10 minutos, ya que han sido salados para concentrar su sabor y para preservarlos, por lo que realmente son muy salados. Luego se enjuagan y se cuecen en agua, lo que crea un caldo que le da el sabor inconfundible al caldo.<br \/>\nLuego est\u00e1n los chiles guajillo, que a\u00f1aden su tan gustado sabor y picor ligero. Muchos chefs les dejan los cascarones, ya que son salados, crujientes y quedan muy bien en el caldo, pero se los puedes quitar si as\u00ed lo decides para que los camarones queden m\u00e1s suaves.
