Cristina es la autora de <em>Mexico Cooks!<\/em>, un sitio web culinario y cultural mexicano. Tambi\u00e9n es conocida por organizar unos tours extraordinarios.<\/p>\n<p>Originaria de Chicago, lleg\u00f3 a Tijuana, M\u00e9xico en 1981 como trabajadora social y 30 a\u00f1os despu\u00e9s, vive en Morelia, Michoac\u00e1n. Aprendi\u00f3 a preparar de las mayoras (quienes cocinan en los hogares michoacanos).<br \/>\nSin m\u00e1s, les presento a Cristina.<\/p>\n<p>Quiero ofrecerles mis recetas personales para hacer frijoles refritos y de la olla. La siguiente receta para los frijoles refritos es sencilla y deliciosa, a\u00fan para los que no quieren probarlos.<\/p>\n<p><img class=\"aligncenter size-large\" src=\"http:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2009\/12\/Christina-Potters-Refried-Beans-2-thumb-510x382-638.jpg\" alt=\"Frijoles Refritos de Cristina Potters 1\" width=\"912\"><\/p>\n<p>En el centro del pa\u00eds, los frijoles m\u00e1s usados son los peruanos, frijoles ovalados y amarillos que cocidos agarran un color beige p\u00e1lido y una consistencia cremosa. A m\u00ed me prepar los frijoles de la olla, servidos con una cucharada de salsa fresca (jitomate, cebolla, serrano y cilantro picados y sal). A menudo preparo arroz blanco, lo pongo en un plato y le echo encima estos frijoles, salsa fresca y queso cotija desmoronado, con lo que tengo una comida completa.<\/p>\n<p><img class=\"aligncenter size-large\" src=\"http:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2009\/12\/Christina-Potters-Refried-Beans-3-thumb-510x360-640.jpg\" alt=\"Frijoles Refritos de Cristina Potters 2\" width=\"912\"><\/p>\n<p>Para desayunar, preparo frecuentemente frijoles refritos. Los sirvo con huevos revueltos, rebanadas de aguacate mexicano y tortillas de ma\u00edz calientes, una excelente forma de empezar el d\u00eda.<\/p>\n<p>Un dato curioso: los frijoles refritos no son frijoles vueltos a fre\u00edr. El espa\u00f1ol mexicano usa el prefijo \u201cre\u201d para describir algo excepcional. \u201cRebueno\u201d significa muy, muy bueno. \u201cRefrito\u201d significa entonces, muy frito.<\/p>\n<p>Es muy f\u00e1cil preparar los frijoles de la olla y su sabor fresco es mil veces mejor que los enlatados. Yo preparo medio kilo de frijoles secos a la vez. Despu\u00e9s de cocerlos, sirvo frijoles de la olla, preparo unos refritos y congelo el resto en bolsas de pl\u00e1stico, ya que se congelan muy bien.<\/p>\n<p>Para preparar los frijoles de la olla, el m\u00e9todo tradicional que yo uso no lleva ni cebolla, ni ajo ni sal. Nada m\u00e1s que agua y frijoles secos. Primero, limpia bien los frijoles y saca cualquier piedrita que encuentres. Luego, ponlos en un colador y enju\u00e1galos bajo el chorro de agua. \u00bfSe remojan o no? He probado remojarlos y no remojarlos y el tiempo de cocci\u00f3n es el mismo y yo no remojo. Mi olla de barro tiene lugar para medio kilo de frijoles m\u00e1s el agua suficiente para ponerlos a cocer. Si no tienes olla de barro, una olla gruesa para sopa funciona igual. Pon los frijoles en la olla y luego pon de 6 a 8 tazas de agua fr\u00eda.<\/p>\n<p>Pon los frijoles a fuego alto. Una vez que suelten el hervor, baja el fuego a medio y tapa la olla. Cocina los frijoles por una hora y checa el nivel de agua. Si necesitas agregar m\u00e1s agua que est\u00e9 hirviendo, ya que si les pones agua fr\u00eda, los frijoles se pueden poner duros. Coc\u00ednalos hasta que pruebes uno y est\u00e9 suave y cremoso. El caldo se espesar\u00e1 ligeramente.<\/p>\n<p><img class=\"aligncenter size-large\" src=\"http:\/\/patijinich.com\/pati_2020\/wp-content\/uploads\/2009\/12\/Christina-Potters-Refried-Beans-4-thumb-510x300-642.jpg\" alt=\"Frijoles Refritos de Cristina Potters 3\" width=\"912\">Frijoles de la olla ya cocidos encima de los chiles dorados, listos para hacer frijoles refritos.<\/p>\n<p>Este es el momento de ponerles sal, despu\u00e9s de cocerlos pero mientras siguen calientes. Yo uso Espuma del Mar (sal de mar mexicana del Estado de Colima), por su sabor dulce y salado a la vez, pero cualquiera sirve. A\u00f1ade un poco menos de la que piensas, ya que siempre puedes agregar m\u00e1s despu\u00e9s, para no salarlos.<\/p>\n<p>Si vives en los Estados o Canad\u00e1, puedes pedir los frijoles secos estupendos que vende Rancho Gordo. Su due\u00f1o, mi amigo Steve Sando, vende frijoles tanto a restaurantes como a particualres. Si has probado frijoles normales y no te gustan, saben delicioso, prueba los de Rancho Gordo y te sorprender\u00e1s gratamente.<\/p>\n<p><img class=\"aligncenter size-large\" Parte los chiles desde la punta hasta casi el tallo y a\u00f1\u00e1delos a la manteca. D\u00f3ralos a fuego medio hasta que el chile tenga color caf\u00e9 oscuro, casi negro. Deja que la manteca o el aceite se enfr\u00eden un poco antes de seguir.<\/div><\/li><li id=\"wprm-recipe-9727-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Ahora a\u00f1ade los frijoles y un poco de caldo. Cuando los frijoles empiecen a hervir, mach\u00e1calos junto con el chile hasta que tengan una consistencia tersa. A\u00f1ada m\u00e1s caldo si es necesario hasta que los frijoles tengan la consistencia que deseas.
