Es ligeramente dulce, con un sabor a alcohol casero, refrescante y con un hermoso color \u00e1mbar. Es una bebida fermentada casera proveniente del Estado de Jalisco, hogar tambi\u00e9n de otros s\u00edmbolos mexicanos como el tequila, los charros y los mariachis. Tiene una base de pi\u00f1a fresca, canela, piloncillo y agua y se bebe en M\u00e9xico desde tiempos prehisp\u00e1nicos.<\/p>\n<p>Lo he preparado muchas veces. Primero, cuando Daniel y yo nos mudamos a Texas, para celebrar que encontramos piloncillo en supermercado de este pa\u00eds. Luego, cuando nos mudamos a Washington, para contrarestar el calor de aquel primer verano y para que nuestra nueva casa tuviera m\u00e1s sabor de hogar. Hace un par de a\u00f1os, hice varios litros para servir a una clase grande en la que prepar\u00e9 comida de Jalisco.<\/p>\n<p>Y luego me olvid\u00e9 de \u00e9l. Hasta este verano cuando nos mudamos, el calor comenz\u00f3 nuevamente y desempaqu\u00e9 mi olla de barro de Tlaquepaque, Jalisco, perfecta para hacer Tepache, que es muy f\u00e1cil de hacer si lo vigilas.<\/p>\n<p>Necesitas una pi\u00f1a madura, amarilla y suave al tacto.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7552\" Ya puedes ponerle cerveza para agilizar el proceso de fermentaci\u00f3n. Justo despu\u00e9s de ponerle la cerveza, tuve que ir a Nueva York. Mi esposo se qued\u00f3 a cargo de vigilar el tepache, pero estaba demasiado ocupado cuidando a nuestros tres monstruos, as\u00ed que el tepache se hizo vinagre.<\/p>\n<p>El chiste es que despu\u00e9s de echarle la cerveza, no hay que dejarlo reposar m\u00e1s de 12 a 15 horas. Despu\u00e9s de eso, hay que colarlo y beberlo o ponerlo en una jarra y refrigerarlo.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7570\" Deja reposar durante 2 d\u00edas, o 48 horas, en un lugar c\u00e1lido de tu cocina. La mezcla comenzar\u00e1 a fermentarse y aparecer\u00e1n burbujas en la superficie. A\u00f1ade una taza de cerveza, revuelve bien y deja reposar durante 12 horas m\u00e1s.
