Cada ma\u00f1ana, bajan muchas mujeres de la monta\u00f1a a vender canastas de zarzamoras en el mercado y en las calles, se les acaban casi de inmediato.<\/p>\n<p>\u00bfQu\u00e9 se puede hacer con ellas? Te las puedes comer as\u00ed como est\u00e1n, licuarlas con un poco de menta para ponerlas encima de helados o panqu\u00e9s o puedes preparar una sopa fr\u00eda. Mi forma favorita de usar las zarzmoras es como cobertura de un pay de queso.<\/p>\n<p>El pay de queso con zarzamoras es muy popular en mi pa\u00eds, y aunque tenemos pays de queso con chocolate, con cajeta, etc., lo tradicional en Valle de Bravo es hacerlo con zarzamoras.<\/p>\n<p>Aqu\u00ed tengo unas que juntamos Juju y yo hace unos d\u00edas.<\/p>\n<figure id=\"attachment_5450\" aria-describedby=\"caption-attachment-5450\" style=\"width: 576px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" class=\"wp-image-5450 size-large\" src=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2017\/07\/juju-in-blackberry-field-576x1024.jpg\" alt=\"juju\" width=\"576\" height=\"1024\" srcset=\"https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2017\/07\/juju-in-blackberry-field.jpg 576w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2017\/07\/juju-in-blackberry-field-169x300.jpg 169w, https:\/\/patijinich.com\/pati_2020\/es\/wp-content\/uploads\/sites\/3\/2017\/07\/juju-in-blackberry-field-150x267.jpg 150w\" sizes=\"(max-width: 576px) 100vw, 576px\" \/><figcaption id=\"caption-attachment-5450\" class=\"wp-caption-text\">Mientras las busc\u00e1bamos, me ense\u00f1\u00f3 a subir historias en Instagram, porque yo no ten\u00eda idea de c\u00f3mo hacerlo, as\u00ed que pueden ver las fotos en mi cuenta de <a href=\"https:\/\/www.instagram.com\/patijinich\/\" target=\"_blank\" rel=\"noopener noreferrer\">Instagram<\/a>.<\/figcaption><\/figure>\n<p>Este postre tiene tres partes, todas f\u00e1ciles de hacer. A continuaci\u00f3n les explico cada una.<\/p>\n<p>Para la costra: ueles las galletas y las mezclas con mantequilla derretida y una pizca de canela. Luego las pones en el fondo del molde para pay presionando con las manos para crear una costra uniforme, y s\u00fabela un poco para que haya tambi\u00e9n a los lados. Refrigera la costra antes de a\u00f1adirle la mezcla de queso, de otra manera, no soportar\u00e1 el relleno y se desmoronar\u00e1.<\/p>\n<p>Para el relleno: me gusta hacerlo espeso. Para eso, hay que ponerle crema agria y queso cottage. Es importante no hornear la mezcla de m\u00e1s, unos 55 minutos y ya. Se esponjar\u00e1 y dorar\u00e1 ligeramente y un palillo insertado en el medio debe salir h\u00famedo, no mojado.<\/p>\n<p>Para la cobertura: yo uso grenetina para que cuaje bien, as\u00ed se sostiene y no se escurre. Hierve la mezcla de zarzamoras, luego mach\u00e1cala y ponle la grenetina. Cuando se enfr\u00ede a temperatura ambiente, la pones encima del pay y lo refrigeras. No dejes que la mezcla de zarzamoras se empiece a cuajar en la olla.<\/p>\n<p>Aunque puedes hacer este pay de queso con muchas otras coberturas, prueba esta primero, te va a encantar.<\/p>\n<p><img Presiona con las manos o con la parte de atr\u00e1s de una cuchara en el fondo del molde para crear una costra uniforme, presionando para crear una orilla en los lados de 1 cm de altura aproximadamente. Tapa y refrigera mientras preparas el relleno.<\/div><\/li><li id=\"wprm-recipe-9238-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Precalienta el horno a 175 C y pon la rejilla en la mitad del horno.<\/div><\/li><li id=\"wprm-recipe-9238-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para el relleno: en la jarra de la licuadora, pon los huevos, el queso cottage y la crema agria. Lic\u00faa hasta obtener una mezcla suave. Agrega el queso crema, el az\u00facar, el extracto de vainilla, la Maizena y lic\u00faa nuevamente hasta incorporar todo.<\/div><\/li><li id=\"wprm-recipe-9238-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Retira la costra del refrigerador y vierte la mezcla de la licuadora encima, sacude ligeramente el molde para extender la mezcla. Hornea de 55 minutos hasta una hora. Un palillo insertado en el medio debe salir h\u00famedo, no mojado con mezcla cruda.<\/div><\/li><li id=\"wprm-recipe-9238-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Retira del horno. El pay de queso estar\u00e1 muy esponjado. Cuando lo saques del horno se bajar\u00e1 un poco, y pueden aparecer grietas en la superficie, lo que es normal. Deja que se enfr\u00ede.<\/div><\/li><li id=\"wprm-recipe-9238-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para la cobertura: en una olla mediana, mezcla las zarzamoras, el jugo de lim\u00f3n y el az\u00facar y calienta a fuego alto. Cuando suelte el hervor, revuelve y cocina de 2 a 3 minutos, mientras machacas las zarzamoras con machacador.<\/div><\/li><li id=\"wprm-recipe-9238-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Retira del fuego y a\u00f1ade un sobre de grenetina. Revuelve bien hasta que se disuelva la grenetina totalmente y deja enfriar a temperatura ambiente.<\/div><\/li><li id=\"wprm-recipe-9238-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para armar el pay: vierte la mezcla de zarzamoras encima del pay fr\u00edo. Tapa con pl\u00e1stico y refrigera durante al menos 2 horas para que se enfr\u00ede el pay y cuaje la cobertura de zarzamoras.<\/div><\/li><li id=\"wprm-recipe-9238-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Retira del refrigerador. Pon agua tibia en una taza y moja ah\u00ed un cuchillo de mesa. P\u00e1salo alrededor de la orilla del molde y hacia abajo. Abre el molde y sirve.
