Seg\u00fan los cubanos: sin duda de Cuba. Seg\u00fan los ecuatorianos: claro que de Ecuador. Seg\u00fan los venezolanos: por supuesto que es de Venezuela. Seg\u00fan los mexicanos, sin duda, claro que por supuesto que es mexicano, as\u00ed que no queda duda, es mexicano \u00a1S\u00ed se\u00f1or!<\/p>\n<p>Cada pa\u00eds latinoamericano lo reclama como suyo. Como les encanta a todos, ya es parte de la cultura y gastronom\u00eda de todos esos pa\u00edses.<\/p>\n<p>Sin importar de donde vengas, la forma tradicional de hacerlo es preparar un pastel algo seco y luego ba\u00f1arlo en la salsa de tres leches hecha con leche normal, evaporada y condensada.<\/p>\n<p>Con los a\u00f1os han salido algunas variantes, con <a href=\"\/es\/recipe\/cajeta-casera\/\">cajeta<\/a> o dulce de leche, nueces, coco, con ron, frutas ex\u00f3ticas, caf\u00e9, etc. El pastel se presta para experimentar porque es sencillo de hacer y f\u00e1cil de transformar.<\/p>\n<p>En casa, nos encanta el chocolate y nos cuesta trabajo decidirnos entre el pastel de tres leches de vainilla o de chocolate, as\u00ed que decid\u00ed hacer uno marmoleado que funcion\u00f3 de maravilla.<\/p>\n<p>El pastel de vainilla y de chocolate se juntan y se ba\u00f1an en la salsa de tres leches. Lo adorno con bastante chocolate mexicano rallados y un poco de canela molida.<\/p>\n<p>Si lo quieres hacer a\u00fan m\u00e1s decadente, puedes ponerle cajeta o dulce de leche encima.<\/p>\n<p>Por si fuera poco, se puede hacer con anticipaci\u00f3n y as\u00ed sabe mucho mejor, mientras se remoja y enfr\u00eda en la salsa de tres leches. Quedar\u00e1s muy bien si lo llevas a una fiesta o reuni\u00f3n.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-5770\" Engrasa un molde para pastel de aprox. 23x33 cm<\/div><\/li><li id=\"wprm-recipe-9430-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para preparar el pastel: en una batidora con el aditamento de globo, bate las claras a velocidad media-alta hasta que se formen picos suaves, de 4 a 5 minutos. Baja la velocidad a media y a\u00f1ade el az\u00facar poco a poco, batiendo las claras hasta que se formen picos duros y brillantes. Pasa las claras a un recipiente grande y aparta.<\/div><\/li><li id=\"wprm-recipe-9430-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Vierte las yemas a otro molde recipiente grande y bate con un globo o tenedor, hasta que est\u00e9n esponjosas y de color amarillo p\u00e1lido. A\u00f1ade la vainilla y sigue batiendo hasta incorporar bien todo. Incorpora con cuidado la mezcla de yemas a la mezcla de claras con una esp\u00e1tula de hule, para no desinflar las claras. Incorpora la harina 1\/4 de taza a la vez y revuelve bien.<\/div><\/li><li id=\"wprm-recipe-9430-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">En un recipiente peque\u00f1o, mezcla el agua caliente con la cocoa en polvo. Vierte la mitad de la masa en otro recipiente e incorpora la cocoa con una esp\u00e1tula hasta que est\u00e9n totalmente mezclados.<\/div><\/li><li id=\"wprm-recipe-9430-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Extiende la masa de vainilla en el molde engrasado. Vierte la masa de chocolate encima, en l\u00ednea recta hacia el centro. Con un cuchillo o cuchara, haz un dise\u00f1o de remolino desde un lado del molde al otro. Hornea de 22 a 25 minutos, hasta que la superficie del pastel este ligeramente dorada y se sienta esponjosa al tacto. Saca el pastel del horno y deja que se enfr\u00ede.<\/div><\/li><li id=\"wprm-recipe-9430-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Usando un tenedor, haz hoyos por toda la superficie del pastel, para que absorba la salsa.<\/div><\/li><li id=\"wprm-recipe-9430-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para hacer la salsa: en un recipiente grande, combina las tres leches y la vainilla y revuelve bien. Vierte 2\/3 de la salsa resultante encima del pastel. No te preocupes si parece que es mucha salsa, el pastel la absorber\u00e1 toda.<\/div><\/li><li id=\"wprm-recipe-9430-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Tapa y refrigera al menos 2 horas o toda la noche. Reserva el resto de la salsa de tres leches.<\/div><\/li><li id=\"wprm-recipe-9430-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Cuando vayas a decorar el pastel, s\u00e1calo del refrigerador y vierte con una cuchara el resto de la salsa encima del pastel.<\/div><\/li><li id=\"wprm-recipe-9430-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Para preparar la crema batida: en una batidora de pedestal con el aditamento de globo, bate la crema con el az\u00facar glass a velocidad media hasta que se formen picos firmes, unos 6 minutos. Embetuna todo el pastel con la crema batida.
