Me ha hecho valorar a mi pa\u00eds cuando voy a M\u00e9xico y a las comidas que he podido replicar en mi cocina.<\/p>\n<p>Hace 15 a\u00f1os que nos mudamos de la Ciudad de M\u00e9xico a Texas. He aprovechado cada oportunidad desde entonces para regresar, aunque sea de visita. Siempre aprendo o descubro algo nuevo, y siempre hay un platillo que me impacta de tal forma que no puedo esperar a prepararlo para mis hijos en casa. Si me lo piden una y otra vez, se convierte en un cl\u00e1sico que espero recuerden siempre.<\/p>\n<p>Eso pas\u00f3 con los Caballeros Pobres de Yucat\u00e1n, hasta lo inclu\u00ed en el episodio de <em>Brunch en Casa de los Jinich<\/em> de la Temporada 3 de mi programa de televisi\u00f3n. Es un platillo para el fin de semana, cuando podemos hacer una sobremesa larga y cuando no me importa preparar comida m\u00e1s laboriosa o tardada en las que mis hijos participan con gusto.<\/p>\n<p>Dany y yo lo probamos por primera vez en Yucat\u00e1n hace 5 a\u00f1os. Fuimos a comer a Los Almendros, un restaurante cl\u00e1sico en M\u00e9rida y le hice al mesero las 3 preguntas que siempre hago y que le chocan a mi marido:<\/p>\n<p>1. \u00bfQu\u00e9 es lo que m\u00e1s le gustaba del men\u00fa? Dany siempre me dice, \u201c\u00bfqu\u00e9 importa lo que le gusta comer, Pati? \u00bfY si tiene gustos diferentes a los tuyos? \u00bfO si trata de venderte algo que lleva mucho tiempo en la cocina?\u201d<\/p>\n<p>2. \u00bfCu\u00e1l es la comida t\u00edpica del men\u00fa? Dany me dice, \u201cpuede ser que incluyan algunos platillos para demostrar que el restaurante es aut\u00e9ntico, sin importar si son ricos o no.\u201d<\/p>\n<p>3. \u00bfQu\u00e9 es lo que m\u00e1s venden?\u201d Dany ya s\u00f3lo volte\u00f3 los ojos.<\/p>\n<p>Para la pregunta 1, el mesero respondi\u00f3 \u201ccaballeros pobres\u201d un nombre enigm\u00e1tico en verdad. Para la 2, respondi\u00f3 \u201ccaballeros pobres ha estado en el men\u00fa desde que el restaurante abri\u00f3 en 1962. Es un postre que ha existido en M\u00e9rida siempre.\u201d Yo ya quer\u00eda correr a la cocina por uno. Para la 3, dijo \u201ctodos piden caballeros pobres.\u201d OK. Algunas versiones usan bolillos o teleras (m\u00e1s peque\u00f1as). Puedes usar cualquier pan con corteza que te guste.<br \/>\nLuego, las rebanadas gruesas se remojan en una mezcla de leche, vainilla y leche condensada La Lechera. Los 120 invitados ve\u00edan entusiasmados c\u00f3mo remojaba el pan en la mezcla de leche. El pan no se remoja en huevos batidos, se separan primero. Las claras se baten hasta formar ondas duras igual que el merengue y luego se a\u00f1aden las yemas para formar un capeado.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-6180\" jarabe desde antes y recalentarlo, o hacerlo mientras remojas el pan.<\/p>\n<p>Se me olvidaba Que tambi\u00e9n llevan almendras picadas encima, y algunos le a\u00f1aden jerez al jarabe, as\u00ed se que hay de esta receta, esta es mi favorita. Me gusta comerlos calientes con el jarabe tibio y servirlo como plato principal para un desayuno o brunch de fin de semana. En Yucat\u00e1n se sirve fr\u00edo y como postre y como reconozco que as\u00ed tambi\u00e9n sabe muy rico, siempre hago de m\u00e1s para refrigerar lo que sobre y com\u00e9rmelo fr\u00edo. <div
